Red lentil dhal with roasted cauliflower & butternut squash – an easy, healthy, delicious vegan meal that is good all year round! Post sponsored by Appletiser.
Dhal (or dahl or dal) is one of my go-to meals; it is easy to make, satisfying and very healthy. It is just as delicious eaten outside in the sunshine as it is when eaten wrapped up in a blanket on a cold day. Which is perfect for this awkward time of year, when the weather could go either way. Vegan fruit and nut flapjacks – easy vegan oaty flapjacks (oat cookie bars) filled with dried fruits, nuts and seeds. Perfect for snacking, lunchboxes and hiking!
Flapjacks have to be the ultimate in simple yet satisfying treats. If you are feeling low on energy then a sweet, chewy, buttery flapjack with a cup of tea is just the thing to perk you back up again. Here I have veganised them and added a tasty mix of dried fruits, nuts and seeds (mostly because I wanted to clear some odds and ends out of the cupboard but the result is delicious!) (more…)
Vegan chocolate raspberry scones – tender vegan scones made with coconut oil and filled with chocolate chunks and raspberries, topped with a raspberry glaze. Easy to make and amazing for breakfast, brunch or a snack!
While I do love a plain scone, split and spread thickly with jam and cream; sometimes a flavoured one is what I want. One that has enough taste and sweetness of it’s own that it needs nothing more than a smear of butter to really make it shine. (more…)

Vegan ginger cake – a moist, sticky, spicy sheet cake that is full of flavour, easy to make and perfect for snacking on. Egg and dairy free.
I know it isn’t really the right time of year for ginger cake, it is much more of an Autumn/Winter kind of thing; but we have been having a lot of dreary weather recently and I have just been in the mood for comforting bakes and warm flavours. (more…)
Vegan chocolate chip cookies – crispy round the edges, chewy in the middle, loaded with chocolate chips and really easy to make; these cookies will become your new favourite recipe!
I had one of those days at the weekend where you just don’t know what you are doing with yourself. I didn’t want to do any of the things that needed to be done round the house so instead I was just faffing about doing nothing at all. To pull myself out of the mood I decided to bake some cookies; and that ended up turning into a testing session to perfect my vegan chocolate chip cookies recipe. (more…)
Vegan chocolate chip banana bread – a vegan version of everyone’s favourite bake. Easy to make using storecupboard ingredients, packed with chocolate chips and topped with a blueberry glaze; this banana bread is seriously good!
Banana bread has to be my all-time favourite bake. My mum used to make it regularly when I was growing up and now I make it whenever there are blackened bananas in the fruit bowl (either that or they go into a smoothie). I have been trying to eat plant based most of the time recently so I wanted to make a vegan version of banana bread. The good news is that it is really easy to do and it is indistinguishable from the regular kind! (more…)
Vegan peanut butter chocolate chip pecan bars – incredibly moreish vegan peanut butter snack bars loaded with chocolate chips and pecans.
These vegan peanut butter chocolate chip pecan bars are crazy good; I could not stop eating them. They are somewhere between a cake and a blondie in texture; with a mild peanut butter flavour, a hint of cinnamon and loads of chocolate chips and crunchy pecans. (more…)

It would be a lovely cake to make for occasions such as Easter or Mother’s Day, not that it needs a special occasion to be baked at all. (more…)
