The other day I shared my recipe for tangzhong burger buns and promised I would be sharing a burger recipe to go with them; well here it is – sun-dried tomato chickpea burgers. These are totally vegetarian/vegan burgers that are easy to make, delicious and very satisfying. I love the tangzhong method of bread baking, it gives such great results every time – pillowy soft, slightly sweet, incredibly versatile bread. If you haven’t heard of tangzhong before then it is quite simple; it just involves making a cooked paste of flour and water which is added to the bread dough; the dough is quite sticky, so is best made in a stand mixer, but it stays soft for days and is SO good! I adore hummus, and always have done. One of my favourite lunches is a pot of hummus with some crusty bread and vegetable sticks for dipping, I will happily eat the entire tub in one sitting. While I do often buy hummus (I’m lazy), it is so quick and easy to make your own and that way you can control the flavours to get the balance of lemon, garlic and olive oil that suits you. (more…)

I only realised a couple of days ago just how close we are to Easter. This year seems to be flying by already and while I am relieved that Winter is over and the weather is warming up, time does seem to be passing by at an alarming rate. I opened up my kitchen baking cupboard the other day and was met with a pile of packets falling on my head. That seemed like a pretty clear sign that it was high time I had a bit of a clearout and used up a few half empty packets of ingredients that had been in there too long. These chewy, no-bake peanut butter granola bars were my attempt to finish off a random selection of odds and ends of nuts, seeds, cereal and dried fruit. (more…)

Beetroot is such a versatile vegetable and is also incredibly good for you, not to mention it’s beautiful, intense colour. Despite the fact that it is one of my favourite vegetables, I don’t think that I have a single recipe using it on the blog! (Until now). That’s a shame because there are so many brilliant ways to use it, from soup to chocolate cake; I will make sure that I remember to post more recipes using beetroot from now on. (more…)

I think that pizza might be my all-time favourite food (of the savoury variety at least). If I had to pick a final meal (lets hope it doesn’t come to that!), then it would almost certainly be pizza followed by ice cream. As much as I love a good takeaway pizza (who doesn’t?!), you can’t beat the home-made kind; I have several varieties of pizza that I make regularly, but this mushroom pesto pizza gets made the most frequently.
