Mincemeat and marzipan cinnamon buns - and wonderful festive breakfast and great way of using up leftovers.

After making my own mincemeat recently I found myself with rather a lot of it! There are only so many mince pies a girl can eat (though that number may be quite high), so I tried to think of some other ways to use some of it up. The best way I came up with was these mincemeat and marzipan cinnamon buns, which also helpfully used up the marzipan leftover from covering my Christmas cake. (more…)

It never feels like Christmas is close for me until I’ve had my first mince pie; they are an absolute essential in making me feel festive and I love them. While I enjoy most mince pies, shop bought or otherwise, as with most things you just can’t beat homemade ones, and if you do make your own then you get the bonus of festive baking, which always helps to put me in a Christmassy mood. If you are going to go through the effort of making your own (and they really aren’t that much effort at all), then you might as well make your own mincemeat too – again, homemade is so much better than shop bought. So it is somehow December already and I have done no Christmas shopping or planning whatsoever; I wont be hosting Christmas lunch (my house is essentially a building site at the moment) but I do need to make dessert and some Christmassy nibbles. I did manage to be organised enough to bake a rich Christmas fruitcake last week though; I haven’t yet decided how I want to decorate it but I’ve got a few weeks left to come up with something. I made these super cute chocolate glazed black cat doughnuts to take to a Halloween party on Saturday, but really their appeal is not just limited to Halloween; omit the black food colouring and you have a brown cat doughnut; omit the cat design altogether and you are left with a delicious, soft, chocolate glazed ring doughnut. Cherry Almond Chia Pudding

Chia pudding with almond milk, honey and vanilla served with a tart cherry compote and toasted flaked almonds; a healthy, filling make-ahead breakfast.

I was given a big tub of chia seeds by my aunt a while back and so far haven’t come up with many ways to use them; some went into (very tasty) granola bars but I wasn’t sure what else to do with them, any suggestions would be most welcome! The most common chia based recipe seems to be chia pudding so I thought I’d give it a go; I honestly thought that I was going to hate it, it just seems like such a strange concept and it looks like a bazillion little eyeballs, but actually I really quite enjoyed it! That doesn’t mean that it isn’t odd, this stuff is weird with a capital W and it certainly won’t be to everyone’s tastes…Damian thought that it was disgusting and I have to agree that the texture is somewhat reminiscent of frogspawn (I don’t think that I’m doing a very good job of selling it…); but if you can get past that then it is really quite tasty and incredibly healthy! I’ve been trying to keep fairly healthy this month, and other than gradually polishing off the remains of the Christmas chocolates I’ve been doing quite well; I’m not dieting per se, just cutting back on the cakes and biscuits for a while. I still find myself in need of a daily mid-morning snack however, something that I can just grab and go and that satisfies any sweet cravings I may have. A granola bar fits the bill well but I think that when it comes to most shop bought versions they are not actually very healthy (or filling) so you may as well just be eating a bar of chocolate…so I made my own, and crammed them full of super healthy and filling ingredients. Apple And Mincemeat Filo Wreath

Festive apple and mincemeat filo pastry strudel wreath - Domestic GothessChristmas is only a few days away now and I’m still not feeling festive…this is due in part to the fact that we don’t have a Christmas tree or any decorations up this year; we are in the process of renovating our house so it’s in a bit of a state and there was nowhere to put the tree. I intend to make up for it next year when the house is finished by going overboard with the decorations… I’m sure I will be in the Christmas spirit come Christmas day, which we are spending with a group of friends, and then Boxing Day will be spent with family. I am on dessert duty for both occasions (what a surprise!) and am planning on making chilled desserts that I can prepare the day beforehand as I wont be in my kitchen to bake anything on the day. So I wont be making this apple and mincemeat filo wreath as it needs to be eaten fresh from the oven (although I am partial to a slice of it cold, the following morning for breakfast). (more…)

Vegetarian Nut Roast Pie

Impressive nut roast pie with vegetarian hot water crust pastry, the perfect vegetarian Christmas option - Domestic Gothess Like fruitcake, nut roast is another very divisive and much-maligned food; oft-mocked and shunned by vegetarians in favour of something a little less clichè, it is rare nowadays to find it on a menu anywhere. Which is a shame as it is both incredibly nutritious and, if done well, extremely delicious. I make nut roast fairly regularly, both I and my fiance love it, and it works perfectly with all of the usual roast dinner trimmings; any leftovers also make great sandwiches with some cheese and chutney. It is also perfect for Christmas dinner as a vegetarian option (though it does also go down well with the meat eaters) as it can be served with all the same sides as the main roast. A regular nut roast is a little plain-looking though, too boring for a proper festive dinner; this pie however makes for a very impressive centerpiece, making sure that any vegetarians don’t feel left out and under-catered for.
