I was craving cake so badly at the weekend that I just had to give in and bake one, there was no point resisting! Besides, I spent a good portion of my weekend re-organising the kitchen (no small task!) so I think that cake was well deserved. To make a bit of space in the cupboard I decided to use up one of my jars of clementine marmalade and make a marmalade and ginger cake. This is a beautifully soft and moist cake with a lovely orange flavour and a hint of warm ginger.

I have porridge for breakfast most weekdays (I am half Scottish after all, though I don’t go as far as making it the way my dad insists is traditional, with just oats, water and salt). But at the weekends I like to have a bit more of an indulgent breakfast. I love pancakes and waffles with all the toppings, but they don’t lend themselves particularly well to a healthy eating plan. I am a big believer in balance, so I think that an indulgent breakfast every now and again is perfectly alright, as well as regular slices of cake; but I wanted to come up with something that fit both bills – decadent but good for you. Apart from my mincemeat bundt cake and a few biscuits and things left over from Christmas I have been doing fairly well so far this year at eating healthily (and yes I know it hasn’t been very long yet, shush you!); I’ve been making lots of soups and stews, stocked up on veg and have put all the packets of lentils at the back of the cupboard to good use. There is no denying that I have a sweet tooth though and I crave a little something sweet after most meals; usually a couple of squares of dark chocolate is enough to satisfy the craving however and has the bonus of actually being good for me. After making my own mincemeat recently I found myself with rather a lot of it! There are only so many mince pies a girl can eat (though that number may be quite high), so I tried to think of some other ways to use some of it up. The best way I came up with was these mincemeat and marzipan cinnamon buns, which also helpfully used up the marzipan leftover from covering my Christmas cake. (more…)

It never feels like Christmas is close for me until I’ve had my first mince pie; they are an absolute essential in making me feel festive and I love them. While I enjoy most mince pies, shop bought or otherwise, as with most things you just can’t beat homemade ones, and if you do make your own then you get the bonus of festive baking, which always helps to put me in a Christmassy mood. If you are going to go through the effort of making your own (and they really aren’t that much effort at all), then you might as well make your own mincemeat too – again, homemade is so much better than shop bought. So it is somehow December already and I have done no Christmas shopping or planning whatsoever; I wont be hosting Christmas lunch (my house is essentially a building site at the moment) but I do need to make dessert and some Christmassy nibbles. I did manage to be organised enough to bake a rich Christmas fruitcake last week though; I haven’t yet decided how I want to decorate it but I’ve got a few weeks left to come up with something.
