Camomile Tea & Lemon Shortbread

Camomile tea and lemon shortbread biscuits - Domestic Gothess I have been meaning for quite some time to try baking with tea, I mean I love to drink it, so why not eat it too? Admittedly I mostly just drink standard black tea (English Breakfast, with milk, no sugar, about four cups a day; in case you were interested.), and although I have a cupboard full of herbal teas I rarely stray away from my usual; although I am partial to the occasional cup of Earl Grey or chai. I tried to like green tea because I know it’s good for me, but I just couldn’t do it; even the flavoured ones had to be forced down… I do try and refrain from drinking caffeine after about 5pm though, so if I fancy a hot drink in the evening I go for camomile tea (or hot chocolate or hot spiced milk). Tahini Biscuits

tahini biscuitsI’ve had a couple of jars of tahini sitting in the back of my cupboard for at least a year now; beyond making houmous I’m not too sure what to do with it as I don’t really like it by itself, if anyone has any suggestions as to what can be done with it please let me know! I figured that I could use it in the same way as peanut butter, so used some up making this sesame take on the classic peanut butter biscuit. I think i may like the result even more than the original! They are perfectly crisp and melt in the mouth with a delicate sesame flavour. (more…)

Don’t get me wrong, I love a challenging bake – one with hundreds of components that can take several days (and mountains of washing up) to complete. Baileys Salted Caramel & Chocolate Mousse Oreo Tarts

Irish cream salted caramel chocolate mousse oreo tarts So I had some Oreos left over from making red velvet brownies with oreo cream cheese mousse the other day. Granted, I could have just eaten them, but it seemed like more fun to come up with something to bake with them (although what I came up with doesn’t actually involve any baking). I’ve been meaning to make some tarts for a while now and although I had been planning on making pastry bases, I decided to swap those for oreo biscuit bases, topped with salted caramel and chocolate mousse. A frequent response I get from Damian when I ask him if there is anything he would like me to bake is “something crispy”. That’s it, no more detail, he’s awkward like that…and a bit texture obsessed. He loves crispy textured things and hates things with the texture of cheesecake…which is rather annoying and why I never really make cheesecake as I’d end up eating the entire thing by myself…and as amazing as that sounds it’s probably not the best idea…(Pretty much the only time I make cheesecakes is when visiting my sister…she’s very much pro cheesecake). Chocolate, Ginger & Almond Biscotti

I bake biscotti every Christmas (and a few times throughout the year as well) as they are so good to give as gifts – they keep for ages, aren’t too delicate so they travel well and are really versatile and adaptable, you can chuck whatever flavourings you like in there. Biscotti translates as twice baked, the dough is first shaped into a log and baked at a moderate temperature until it is risen and firm; the oven is then turned down to a low temperature and the log cut into slices which are spread out on a baking sheet and baked again until crisp. Gingerdead Men – Voodoo Doll Gingerbread Men

Halloween is the perfect time to have some fun with baking and these gingerdead men are certainly fun. Made from a delicious spiced gingerbread dough and decorated to look like voodoo dolls complete with sweetie pins for stabbing them with, they are a great addition to a Halloween party spread and much enjoyment can be had torturing them with sweetie pins before eating them.
