I opened up my kitchen baking cupboard the other day and was met with a pile of packets falling on my head. That seemed like a pretty clear sign that it was high time I had a bit of a clearout and used up a few half empty packets of ingredients that had been in there too long. These chewy, no-bake peanut butter granola bars were my attempt to finish off a random selection of odds and ends of nuts, seeds, cereal and dried fruit. (more…)

More bloomin’ pancakes! I promise that once pancake day is over I will share something that isn’t pancakes, but for now I can’t get enough of them! These ones are baklava inspired – the sweet, syrupy, nutty filo pastry treat in pancake form. These are thick, soft, fluffy American-style pancakes made with Greek yogurt to keep them extra moist and pack in some protein and they are flavoured with cardamom, cinnamon and chopped nuts with a delicious sweet syrup with hints of lemon, orange blossom water and rose. It’s nearly the second best day of the year (after Christmas) – pancake day! I love pancakes in all forms and make them regularly, for breakfast, dessert, dinner (savory or sweet ones!) or a snack; they are infinitely adaptable, easy to make and one of my favourite foods. I realised that I hadn’t really posted any dessert pancakes on the blog, just breakfasty ones; so I am remedying that with these indulgent pancakes with caramel oranges and almond ice cream. (more…)

Healthier Chocolate Banana Waffles

Yesterday I took a trip to London to attend the first ever Best Of PinterestUK awards as several (five!) of my recipes had been shortlisted; I didn’t win in the end but my spiralized vegetable noodle bowls did come runner up in the best healthy recipe category (beaten by a recipe by Fearne Cotton) for which I won a whole kilo of chocolate. Even better than the chocolate though was actually getting to meet a load of my fellow food bloggers, most of whom I had thus far only known online and who were all even lovelier in real life. I have porridge for breakfast most weekdays (I am half Scottish after all, though I don’t go as far as making it the way my dad insists is traditional, with just oats, water and salt). But at the weekends I like to have a bit more of an indulgent breakfast. I love pancakes and waffles with all the toppings, but they don’t lend themselves particularly well to a healthy eating plan. I am a big believer in balance, so I think that an indulgent breakfast every now and again is perfectly alright, as well as regular slices of cake; but I wanted to come up with something that fit both bills – decadent but good for you. Clementine marmalade - a delicious homemade marmalade using clementines, great for Christmas gifts!

Clementines are really cheap in the shops at the moment so I ended up buying two and a half kilograms of them; I’ve been eating several of them a day but wanted to make something to use a few of them up. I really enjoy preserving, particularly when it is cold and dark outside; there is something comforting about the process and winter just makes me want to hole up at home and stockpile homemade foods so I chose to make marmalade with them. The wonderful smell of it simmering away on the stove will also make your house smell like an orange grove, which is enough to brighten up even the most miserable and wet of days. (more…)

After making my own mincemeat recently I found myself with rather a lot of it! There are only so many mince pies a girl can eat (though that number may be quite high), so I tried to think of some other ways to use some of it up. The best way I came up with was these mincemeat and marzipan cinnamon buns, which also helpfully used up the marzipan leftover from covering my Christmas cake. (more…)

Pear And Ginger Jam (Small Batch)

Small batch, no added pectin pear and ginger jam; a lovely gift for Christmas!

Owning your own fruit trees has both positives and negatives, of course it is lovely to have an abundance of food which you have grown yourself, but you can also end up with more fruit than you know what to do with. I gave some away of course, but still managed to end up with a bowl-full of slightly mushy pears; still fine to eat but past the point where you would want to eat them as they are. The best possible use for them I figured was jam; which is also great to give away (not long till Christmas!) if you happen to end up with too much of it but it keeps a good deal longer than fresh fruit.
