If I had to pick one favourite food I think it would have to be pizza (with ice cream for dessert!). I think that I could probably eat pizza every day and not get bored of it; and now I’ve come up with a pizza recipe that means that I can have it for breakfast as well as lunch or dinner! The apple tree in my garden has yielded a decent crop this year. The apples are a little too sharp to eat as they are however so I need to do lots of baking to use them up. What is the first food that come to mind when you think of brunch? There are so many delicious options but for me, it’s got to be waffles. They are a little bit too much effort to make for breakfast (or maybe that’s just me, I am not a morning person and I struggle with anything that is more effort than pouring some cereal into a bowl…), but for brunch they are just perfect and would be my first choice every time. We are currently renovating our kitchen so cooking and baking is pretty much impossible at the moment (though I did somehow manage to make jam in the study yesterday!). So far I have learned how to plaster and next up is woodwork and tiling! It will be at least a couple of weeks yet before we are finished but hopefully the kitchen will be usable again in about a week once we put the sink in and actually have water downstairs! I will keep you updated on our progress and fingers crossed we will have a much nicer kitchen than the ugly, outdated one that we ripped out once we are done. (more…)
I always feel like a bit of a cheat when I post a smoothie recipe because they are so simple that it almost feels wrong to even call it a recipe; I mean, the instructions are only one line long for goodness sake! I unsurprisingly own quite a lot of kitchen equipment (and yet still covet more!); a lot of it gets used regularly; some things, such as the ice cream maker and deep fryer, get brought out every now and again; and some things shamefully get used once then shoved in a drawer never to see the light of day again. My poor waffle maker was one of those things that got used once then put away. It makes no sense to have neglected it so, seeing as how both I and Damian love waffles; I suppose I merely forgot about it’s existence. I came across it whilst attempting to clear out a cupboard and vowed to put it to more frequent use; these chocolate chip almond waffles were a perfect reminder of just how good waffles can be. I love a good muffin but don’t seem to make them very often. When I do get round to baking them I like to make a big batch and store them in the freezer so that I’ve got them on hand for a quick breakfast or snack when needed. It is difficult to pick a favourite flavour, but if I had to I think I would go for lemon poppy seed muffins; their fresh flavour never disappoints and they are so quick and easy to make. (more…)
Did everyone have a good (and sufficiently chocolatey) Easter? I spent the weekend at my parents house, which was lovely, but I always struggle to resume a normal routine after being away and the traveling has worn me out somewhat. A batch of these cranberry, pistachio and coconut energy bites has helped to get me through though! (more…)
I opened up my kitchen baking cupboard the other day and was met with a pile of packets falling on my head. That seemed like a pretty clear sign that it was high time I had a bit of a clearout and used up a few half empty packets of ingredients that had been in there too long. These chewy, no-bake peanut butter granola bars were my attempt to finish off a random selection of odds and ends of nuts, seeds, cereal and dried fruit. (more…)
More bloomin’ pancakes! I promise that once pancake day is over I will share something that isn’t pancakes, but for now I can’t get enough of them! These ones are baklava inspired – the sweet, syrupy, nutty filo pastry treat in pancake form. These are thick, soft, fluffy American-style pancakes made with Greek yogurt to keep them extra moist and pack in some protein and they are flavoured with cardamom, cinnamon and chopped nuts with a delicious sweet syrup with hints of lemon, orange blossom water and rose.
