I don’t make fruit curd very often, for the simple reason that I cannot resist eating the lot. No word of a lie, I ate this entire batch of lemon & lime curd by myself in under a week… It is dangerously addictive stuff! It also happens to be very simple to make and amazingly versatile, not to mention so much nicer than shop-bought. It is fantastic just piled generously on toast, but also works well as a cake, tart, doughnut or eclair filling, swirled through ice cream, yoghurt or cheesecake, on pancakes, waffles or scones and can even be used in steamed puddings and souffles; the list goes on. I have been on a serious pancake drive recently and have been craving them ALL THE TIME… I have pretty low willpower so needless to say I’ve been eating a lot of pancakes! I’ve been making loads of different kinds – banana spelt, apple rye and cinnamon, the classic crepes with lemon and sugar, broccoli and feta and these toasted coconut with chocolate fudge sauce and banana. I was originally just planning on making plain coconut pancakes but at the last minute decided to toast the coconut first; I am glad I did as it adds a whole extra depth of flavour. I then also decided that seeing as I was making that extra bit of effort that I needed to go the whole hog and make chocolate fudge sauce as well; again, an excellent decision. (more…)

The best part about any holiday or celebration is the food, and more specifically, the baked goods; cakes and breads feels so much more special if you only consume them once a year. My favorite Easter bake is hot cross buns, though I do also love Simnel cake, but I have a particularly weak spot for sweet enriched breads. I generally bake at least one batch of hot cross buns around Easter time every year; I decided to do something a little different this year though and baked a hot cross bun loaf using my hokkaido milk bread recipe as the base. Cherry Almond Chia Pudding

I was given a big tub of chia seeds by my aunt a while back and so far haven’t come up with many ways to use them; some went into (very tasty) granola bars but I wasn’t sure what else to do with them, any suggestions would be most welcome! The most common chia based recipe seems to be chia pudding so I thought I’d give it a go; I honestly thought that I was going to hate it, it just seems like such a strange concept and it looks like a bazillion little eyeballs, but actually I really quite enjoyed it! That doesn’t mean that it isn’t odd, this stuff is weird with a capital W and it certainly won’t be to everyone’s tastes…Damian thought that it was disgusting and I have to agree that the texture is somewhat reminiscent of frogspawn (I don’t think that I’m doing a very good job of selling it…); but if you can get past that then it is really quite tasty and incredibly healthy! I’ve been trying to keep fairly healthy this month, and other than gradually polishing off the remains of the Christmas chocolates I’ve been doing quite well; I’m not dieting per se, just cutting back on the cakes and biscuits for a while. I still find myself in need of a daily mid-morning snack however, something that I can just grab and go and that satisfies any sweet cravings I may have. A granola bar fits the bill well but I think that when it comes to most shop bought versions they are not actually very healthy (or filling) so you may as well just be eating a bar of chocolate…so I made my own, and crammed them full of super healthy and filling ingredients. Orange and star anise Christmas snowflake bread (Gibassier) - Domestic GothessI can’t believe that Christmas is less than a month away already…November disappeared in the blink of an eye and now Christmas is nearly here and I don’t even know what we’re doing for it yet; I am feeling decidedly non-festive and more than a little Grinchy… So I decided to do a spot of festive baking in an attempt to make myself feel less unenthusiastic about the whole thing. I made these delicious orange and anise snowflake breads; and while I didn’t end up feeling any more festive (I think more mulled wine may be needed), they were incredibly tasty and satisfying and would be perfect as part of a Christmas breakfast or brunch.
