Clementine marmalade - a delicious homemade marmalade using clementines, great for Christmas gifts!

Clementines are really cheap in the shops at the moment so I ended up buying two and a half kilograms of them; I’ve been eating several of them a day but wanted to make something to use a few of them up. I really enjoy preserving, particularly when it is cold and dark outside; there is something comforting about the process and winter just makes me want to hole up at home and stockpile homemade foods so I chose to make marmalade with them. The wonderful smell of it simmering away on the stove will also make your house smell like an orange grove, which is enough to brighten up even the most miserable and wet of days. (more…)

Mincemeat And Marzipan Cinnamon Buns

Mincemeat and marzipan cinnamon buns - and wonderful festive breakfast and great way of using up leftovers.

After making my own mincemeat recently I found myself with rather a lot of it! There are only so many mince pies a girl can eat (though that number may be quite high), so I tried to think of some other ways to use some of it up. The best way I came up with was these mincemeat and marzipan cinnamon buns, which also helpfully used up the marzipan leftover from covering my Christmas cake. (more…)

Pear And Ginger Jam (Small Batch)

Small batch, no added pectin pear and ginger jam; a lovely gift for Christmas!

Owning your own fruit trees has both positives and negatives, of course it is lovely to have an abundance of food which you have grown yourself, but you can also end up with more fruit than you know what to do with. I gave some away of course, but still managed to end up with a bowl-full of slightly mushy pears; still fine to eat but past the point where you would want to eat them as they are. The best possible use for them I figured was jam; which is also great to give away (not long till Christmas!) if you happen to end up with too much of it but it keeps a good deal longer than fresh fruit. One of the biggest powerhouses in any baker’s arsenal is the stand mixer, it renders a great many tasks considerably easier and enables you to do other things whilst at the same time mixing cake batter, making meringue or kneading bread dough. Unfortunately they are generally prohibitively expensive, which is why when my (second-hand and gifted) KitchenAid mixer exploded I was unable to afford to replace it and have been without one for a long time. I still have it, sat in a cupboard awaiting the time when I get round to finding a replacement circuit board for it, but I keep forgetting to do so. (more…)

Tangy Lemon & Lime Curd

I don’t make fruit curd very often, for the simple reason that I cannot resist eating the lot. No word of a lie, I ate this entire batch of lemon & lime curd by myself in under a week… It is dangerously addictive stuff! It also happens to be very simple to make and amazingly versatile, not to mention so much nicer than shop-bought. It is fantastic just piled generously on toast, but also works well as a cake, tart, doughnut or eclair filling, swirled through ice cream, yoghurt or cheesecake, on pancakes, waffles or scones and can even be used in steamed puddings and souffles; the list goes on. I have been on a serious pancake drive recently and have been craving them ALL THE TIME… I have pretty low willpower so needless to say I’ve been eating a lot of pancakes! I’ve been making loads of different kinds – banana spelt, apple rye and cinnamon, the classic crepes with lemon and sugar, broccoli and feta and these toasted coconut with chocolate fudge sauce and banana. I was originally just planning on making plain coconut pancakes but at the last minute decided to toast the coconut first; I am glad I did as it adds a whole extra depth of flavour. I then also decided that seeing as I was making that extra bit of effort that I needed to go the whole hog and make chocolate fudge sauce as well; again, an excellent decision. (more…)

The best part about any holiday or celebration is the food, and more specifically, the baked goods; cakes and breads feels so much more special if you only consume them once a year. My favorite Easter bake is hot cross buns, though I do also love Simnel cake, but I have a particularly weak spot for sweet enriched breads. I generally bake at least one batch of hot cross buns around Easter time every year; I decided to do something a little different this year though and baked a hot cross bun loaf using my hokkaido milk bread recipe as the base.
