Cherry Almond Chia Pudding

Chia pudding with almond milk, honey and vanilla served with a tart cherry compote and toasted flaked almonds; a healthy, filling make-ahead breakfast.

I was given a big tub of chia seeds by my aunt a while back and so far haven’t come up with many ways to use them; some went into (very tasty) granola bars but I wasn’t sure what else to do with them, any suggestions would be most welcome! The most common chia based recipe seems to be chia pudding so I thought I’d give it a go; I honestly thought that I was going to hate it, it just seems like such a strange concept and it looks like a bazillion little eyeballs, but actually I really quite enjoyed it! That doesn’t mean that it isn’t odd, this stuff is weird with a capital W and it certainly won’t be to everyone’s tastes…Damian thought that it was disgusting and I have to agree that the texture is somewhat reminiscent of frogspawn (I don’t think that I’m doing a very good job of selling it…); but if you can get past that then it is really quite tasty and incredibly healthy! I’ve been trying to keep fairly healthy this month, and other than gradually polishing off the remains of the Christmas chocolates I’ve been doing quite well; I’m not dieting per se, just cutting back on the cakes and biscuits for a while. I still find myself in need of a daily mid-morning snack however, something that I can just grab and go and that satisfies any sweet cravings I may have. A granola bar fits the bill well but I think that when it comes to most shop bought versions they are not actually very healthy (or filling) so you may as well just be eating a bar of chocolate…so I made my own, and crammed them full of super healthy and filling ingredients. Orange and star anise Christmas snowflake bread (Gibassier) - Domestic GothessI can’t believe that Christmas is less than a month away already…November disappeared in the blink of an eye and now Christmas is nearly here and I don’t even know what we’re doing for it yet; I am feeling decidedly non-festive and more than a little Grinchy… So I decided to do a spot of festive baking in an attempt to make myself feel less unenthusiastic about the whole thing. I made these delicious orange and anise snowflake breads; and while I didn’t end up feeling any more festive (I think more mulled wine may be needed), they were incredibly tasty and satisfying and would be perfect as part of a Christmas breakfast or brunch. Banana pancakes with whipped honey butter, quick, easy and healthy(ish), perfect for breakfast or brunch - Domestic Gothess I often buy bananas with the intention of letting them go brown and overripe as I love to bake with them; they are horrible to eat as they are, but mash them up and mix them into cake, or milkshake, or pancakes and they become something truly delicious. The smell of banana bread baking is utterly irresistible; when I don’t want to wait for banana bread to bake though, banana pancakes are the next best thing. Vanilla Almond Milk Porridge With Honey Roasted Pear

Vanilla amond milk porridge with honey roast pear, cinnamon and hazelnuts. Dairy free and easily adaptable to be vegan. I had never tried almond milk up until a couple of days ago when I saw that it was on offer and bought some on a whim. I didn’t think that I would really like it but was interested to try…and now I’m hooked! It’s surprisingly delicious, though not for everyone; Damian tried it and proclaimed it to be “really weird, and the taste didn’t fit the texture”, whatever that means…he’s odd. I don’t think I would ever want it in my tea, but I would now rather drink a glass of almond milk as opposed to regular milk, and almond milk hot chocolate is something of a revelation. (more…)

Coconut & Cardamom Rice Pudding With Blackberry Compote

Creamy coconut milk and cardamom rice pudding with blackberry compote, vegan and lactose free - Domestic Gothess I’ve been on a bit of a compulsive blackberry picking drive recently; I can’t seem to take the dog for a walk without coming home with a bagful of blackberries, it just seems a shame to walk past the heavily laden brambles without at least nabbing a few… I have made jam (recipe coming soon!) and I’ve been eating an awful lot of blackberry compote, which is delicious with yoghurt or porridge, but I think I enjoyed it most when I paired it with this creamy, comforting coconut and cardamom rice pudding. Marbled Rye Bread

Marbled rye bread recipe - Domestic Gothess I have managed to end up with five bags of rye flour to get through so expect to see quite a few recipes with rye in coming up! Obviously rye bread is the first thing that comes to mind when you think of things made with rye, and I came across a picture on Pinterest of a beautifully marbled rye bread, half light and half dark coloured; I can’t resist a beautiful bread so I knew that I had to give it a try, the result was both extremely attractive and delicious.
