Double Chocolate Almond Raisin Muffins & A Giveaway

Jumbo double chocolate almond raisin muffins

I’ve had a pretty busy couple of weeks recently, there has been some very grown-up stuff happening (words like mortgage! Solicitors! Conveyancing!), and some not-so-grown-up stuff (epic pirate cake baking!), as well as several friends coming to stay; so unfortunately I’ve had very little time for blogging and my social media has been thoroughly neglected. I thought I would ease back into things with something simple – double chocolate almond raisin muffins, because muffins are some of the easiest things you can make. (more…)

Toasted Coconut Pancakes With Chocolate Fudge Sauce

Toasted coconut pancakes with chocolate fudge sauce and banana, a decadent breakfast or brunch.

I have been on a serious pancake drive recently and have been craving them ALL THE TIME… I have pretty low willpower so needless to say I’ve been eating a lot of pancakes! I’ve been making loads of different kinds – banana spelt, apple rye and cinnamon, the classic crepes with lemon and sugar, broccoli and feta and these toasted coconut with chocolate fudge sauce and banana. I was originally just planning on making plain coconut pancakes but at the last minute decided to toast the coconut first; I am glad I did as it adds a whole extra depth of flavour. I then also decided that seeing as I was making that extra bit of effort that I needed to go the whole hog and make chocolate fudge sauce as well; again, an excellent decision. (more…)

Hokkaido Milk Bread Hot Cross Bun Loaf

Hokkaido milk bread hot cross bun loaf, perfect for Easter - Domestic Gothess

The best part about any holiday or celebration is the food, and more specifically, the baked goods; cakes and breads feels so much more special if you only consume them once a year. My favorite Easter bake is hot cross buns, though I do also love Simnel cake, but I have a particularly weak spot for sweet enriched breads. I generally bake at least one batch of hot cross buns around Easter time every year; I decided to do something a little different this year though and baked a hot cross bun loaf using my hokkaido milk bread recipe as the base. Refined Sugar-Free Oatmeal Spelt Pancakes With Cinnamon Apples & January 2016 Degustabox Review

Refined sugar free oatmeal spelt pancakes with cinnamon apples - light, fluffy, healthy pancakes made with ground oats and spelt flour, sweetened with carob syrup

Welcome to my review of the January 2016 Degustabox. If you’re not familiar with the Degustabox then in brief it’s a subscription service whereby each month you’re sent a box full of goodies to try; most are either new brands or products and it works out far cheaper than buying everything individually in the shops. It is a bit of a lottery however as you have no idea what you will be sent, some products you may love, and others you might not be so keen on; the surprise element is quite fun though, and it encourages you to try products that you wouldn’t normally think to buy. If you fancy giving a box a try yourself then simply enter the discount code BLDEG15 at the checkout and you’ll get £6 off your first order! (more…)

Cherry Almond Chia Pudding

Chia pudding with almond milk, honey and vanilla served with a tart cherry compote and toasted flaked almonds; a healthy, filling make-ahead breakfast.

I was given a big tub of chia seeds by my aunt a while back and so far haven’t come up with many ways to use them; some went into (very tasty) granola bars but I wasn’t sure what else to do with them, any suggestions would be most welcome! The most common chia based recipe seems to be chia pudding so I thought I’d give it a go; I honestly thought that I was going to hate it, it just seems like such a strange concept and it looks like a bazillion little eyeballs, but actually I really quite enjoyed it! That doesn’t mean that it isn’t odd, this stuff is weird with a capital W and it certainly won’t be to everyone’s tastes…Damian thought that it was disgusting and I have to agree that the texture is somewhat reminiscent of frogspawn (I don’t think that I’m doing a very good job of selling it…); but if you can get past that then it is really quite tasty and incredibly healthy! No-Bake Superfood Granola Bars

No bake superfood granola bars - chewy, filling and super healthy granola bars packed full of seeds, nuts, dried fruit, oats and dark chocolate

I’ve been trying to keep fairly healthy this month, and other than gradually polishing off the remains of the Christmas chocolates I’ve been doing quite well; I’m not dieting per se, just cutting back on the cakes and biscuits for a while. I still find myself in need of a daily mid-morning snack however, something that I can just grab and go and that satisfies any sweet cravings I may have. A granola bar fits the bill well but I think that when it comes to most shop bought versions they are not actually very healthy (or filling) so you may as well just be eating a bar of chocolate…so I made my own, and crammed them full of super healthy and filling ingredients. Orange & Anise Snowflake Bread

Orange and star anise Christmas snowflake bread (Gibassier) - Domestic GothessI can’t believe that Christmas is less than a month away already…November disappeared in the blink of an eye and now Christmas is nearly here and I don’t even know what we’re doing for it yet; I am feeling decidedly non-festive and more than a little Grinchy… So I decided to do a spot of festive baking in an attempt to make myself feel less unenthusiastic about the whole thing. I made these delicious orange and anise snowflake breads; and while I didn’t end up feeling any more festive (I think more mulled wine may be needed), they were incredibly tasty and satisfying and would be perfect as part of a Christmas breakfast or brunch. Apple, Fig, Pecan & Honey Scones & A JING Tea Giveaway

Apple, fig, pecan and honey scones with a hint of spice - Domestic GothessIt is no secret that I love tea; I drink about seven cups of tea a day but barely notice most of them as I am so busy doing something else at the same time; but sometimes it is good to stop for a moment, take a step back from whatever it is that you are so incredibly busy with and breathe. Take ten minutes for yourself to relax, regroup, savour the tea and come back to whatever you were working on refreshed and focused. (more…)

Gingerbread Spiced Apple Doughnuts

Gingerbread spiced apple doughnuts - Domestic GothessI have been craving doughnuts for several months now, but held off making them until there was an occasion where there would be enough people to eat them all; the problem with doughnuts is that they really are best eaten on the day they are made after which they start to go a bit dry. So when some friends finally hosted a party I took the opportunity to make some to take along. (more…)

Banana Pancakes With Honey Butter

Banana pancakes with whipped honey butter, quick, easy and healthy(ish), perfect for breakfast or brunch - Domestic Gothess I often buy bananas with the intention of letting them go brown and overripe as I love to bake with them; they are horrible to eat as they are, but mash them up and mix them into cake, or milkshake, or pancakes and they become something truly delicious. The smell of banana bread baking is utterly irresistible; when I don’t want to wait for banana bread to bake though, banana pancakes are the next best thing. They are super quick and easy to make, taste amazing and are much healthier than cake! (more…)
