Something a little different from me today; I have mentioned before on the blog that I am a boring breakfaster and generally just eat cereal or porridge; occasionally I make an effort to have something a bit more interesting, though what usually happens is that I will have my cereal for breakfast then have a second breakfast for lunch…This is mainly because I tend to wake up hungry and just want to EAT, I don’t want to have to cook first……
I have managed to end up with five bags of rye flour to get through so expect to see quite a few recipes with rye in coming up! Obviously rye bread is the first thing that comes to mind when you think of things made with rye, and I came across a picture on Pinterest of a beautifully marbled rye bread, half light and half dark coloured; I can’t resist a beautiful bread so I knew that I had to give it a try, the result was both extremely attractive and delicious….
When I was sent an OXO Good Grips non stick frying pan (£50 from Lakeland) to review I knew exactly what to make in it to test it – pancakes! they are one of the best (and tastiest) ways to test just how non stick a pan is, if you can flip a pancake cleanly then it’s a goodun. The Good Grips frying pan was perfect for pancakes – I only had to use the teeniest smidge of butter to cook them in and they didn’t stick at all. It felt very solidly made, with the kind of non-stick coating that isn’t just going to flake off after a couple of uses (I’ve bought some very cheap and crappy cookware in the past…always a false economy) and I was impressed by the addition of a silicone handle in place of the usual plastic which means that the pans are oven-proof up to 200°C, a bonus for me as I didn’t actually own a single frying pan that could go in the oven… And if you are lucky enough to own a dishwasher, it is dishwasher safe and suitable for use on induction hobs….
You know how I said in my last bread post that I’d found a new favourite bread? I was wrong. Or at least, I’ve found a new new favourite bread. This, this is the bread to end all other breads, the kind of bread that dreams are made of…Hokkaido milk bread is quite simply the fluffiest, softest, lightest, most pillowy cloud of deliciousness I have ever eaten. It’s better than brioche…there, I said it. I’m not going to kid you, it’s not the easiest or the quickest bread to make (that’s not to say it’s difficult), but boy is it worth the effort; in fact, I thoroughly recommend that you double the recipe and make two loaves in one go, it’s not really that much extra work and you Will. Not. Regret. It….
Summer is the perfect time to stock up on jam and preserves; yes jam may not be the first thing that comes to mind when there is so much beautiful fresh fruit around that is delicious just as it is, but if you happen to have some that is a little less than perfect or past it’s best then making jam is one of the best ways to use it up and make the most of it. …
I think I may have found a new favourite bread; this muesli bread is hearty, satisfying, delicious and it’s healthy! It is also a great way to use up some of that half eaten packet of muesli forgotten about at the back of the cupboard for 6+ months… (just me?). It stays soft for a good few days in a airtight container and makes fantastic toast; I’ve been enjoying it for breakfast slathered with butter and jam. The flavour is slightly sweet from the dried fruit and a little maple syrup and there’s a hint of warm cinnamon. Because it is full of oats, fruit and nuts it is very filling, so it makes a great breakfast or snack….
I had a bit of leftover cream sitting in the fridge about to pass it’s use by date and couldn’t for the life of me think what to do with it; I had been planning on baking some pain au lait and then I had a thought – why not use cream in place of the milk? I wasn’t entirely sure how well it would work, whether the cream would make the bread too heavy, but I gave it a go regardless and was incredibly pleased by the result….
I think that brioche has got to be just about my favourite thing to come out of France…I’m not talking about the mass-produced stuff that you get in supermarkets that has the texture (and flavour…) of cotton wool; I’m talking about proper brioche, heavily enriched with butter and eggs and yet seemingly impossibly light….
Fellow bloggers, do you ever have those days where you can’t for the life of you think of anything to write…? I’m having one of those…I sat for at least an hour trying to come up with something to say but instead just ended up procrastinating on Pinterest (on which I spend FAR too much time) and didn’t write a single word… So now I’m just writing about having nothing to write and I apologise for the short post!…
