I’m heading off to Bloodstock festival tomorrow; I go to at least one festival every year and am usually very well prepared way in advance. This year however it seems like time has gone by much quicker than usual and I am utterly unprepared, so today is going to be spent in a mad rush trying to get everything packed and sorted. I haven’t even cleaned our tent after last years camping so that is going to be a grim job! (more…)
I opened up my kitchen baking cupboard the other day and was met with a pile of packets falling on my head. That seemed like a pretty clear sign that it was high time I had a bit of a clearout and used up a few half empty packets of ingredients that had been in there too long. I honestly thought that these brownies were going to be rubbish; this was my first time baking with coconut flour and I just made the recipe up as I went along. They didn’t look like anything much when I pulled them out of the oven and they don’t have that much coveted shiny, flaky brownie crust; but when I bit into one I was totally converted, they are extremely good. So rich, fudgy and chocolatey that they are practically indistinguishable from the best regular flour/refined sugar/butter laden brownies. And yet they are free from gluten, grains, refined sugar AND dairy and are made using several highly nutritious ingredients so you can enjoy a slice without feeling too guilty. (more…)
Valentines day is fast approaching and while I have no plans to celebrate it personally (I’m not single, we just don’t really do Valentines), I will happily take any excuse to do a spot of baking, especially when said baking involves copious amounts of chocolate… So I made brownies, because a warm, gooey brownie topped with a generous dollop of ice cream would be my Valentines day dessert of choice. These brownies are elevated beyond regular brownie territory by the addition of strawberries and cream flavoured Lindor truffles, which meld with the dense, fudgy brownie, creating pockets of strawberry and cream flavour. I’ve been trying to keep fairly healthy this month, and other than gradually polishing off the remains of the Christmas chocolates I’ve been doing quite well; I’m not dieting per se, just cutting back on the cakes and biscuits for a while.
