It was only a few years ago, while managing a country pub, that I started to like beer; before then I had found the taste too bitter. But maybe something to do with the fact that I was serving many pints of it a day and taking care of the casks in the cellar changed my mind, and I grew to appreciate the bitterness. I have not however managed to grow to like drinking stout or porter, it is just too strong for me; but, pair it with chocolate and add to to ice cream (or cake) then it is a whole different story. Used in this way the deep, rich flavour complements and accentuates the chocolate and adds a malty flavour without overpowering. It is in short, utterly delicious.
I absolutely could never, and would never, go vegan. This is for two main reasons, those being cheese, and ice cream; which are probably my favourite food groups (don’t try telling me that vegan “cheese” is any kind of substitute for the real stuff). That being said, I do occasionally make a vegan recipe, more out of necessity than on purpose – because I’ve run out of eggs for example. In the case of this vegan roasted banana ice cream, I had some bananas that needed to be used up and fancied making ice cream with them but didn’t have any cream in the house; I did however have a tin of coconut milk; so there you go, accidental vegan ice cream. Can you believe that up until now I have never owned a bundt tin? I have always coveted one, but they are quite expensive (I want a Nordicware one…) so I have never been able to justify buying one. So I was rather pleased when a box full of baking goodies that I was sent to review happened to contain a bundt tin; it is not a Nordicware one, but a silicone, half size (6cup) tin. The size is actually perfect for me, as as beautiful as full size bundts are, they are rather large and make a bit too much cake for a family of two… (more…)
I have only recently discovered the joys of a slow cooker – the ability to just throw everything into a pot, abandon it and come back hours later to a delicious meal. Slow cookers aren’t just good for meat and stews though, you can cook a lot of things in there that you maybe wouldn’t think to; things like brownies, macaroni cheese, porridge, steamed puddings and cheesecake…. I don’t think that I have ever been to a bonfire night celebration as an adult, though the holiday is tinged with nostalgia; as a child I remember being bundled up warm and heading out as a family to watch the local firework display and burning of the guy; or building a bonfire in the back garden (check for hedgehogs!) and fashioning a guy from old clothes and newspaper and then gleefully setting fire to it… There are certain foods that are always reminiscent of Guy Fawkes night as well; crisp, cheesy jacket potatoes, mulled apple juice (though I prefer the grown-up kind now!), squidgy gingerbread, toffee apples, and marshmallows toasted on the bonfire; I used to let mine catch fire so that they were burnt on the outside and liquid on the inside… (more…)
It feels like an absolute age since I last posted! I don’t think I have ever actually gone this long without posting since I first started the blog… I have to admit that I quite enjoyed being lazy and having a bit of a break from blogging and although I am eager to get back into it I am finding it a little difficult to get back into the swing of things! It was my fiance’s birthday last week so obviously there had to be cake, we didn’t really do anything to celebrate though so there were just the two of us to eat said cake, and as much as I like making big, fancy cakes it is not a great idea to have a massive cake when there are only two of you to eat it… So I set out to make a more manageable sized one…I came up with this mini chocolate layer cake with nutella ganache, hazelnut praline and decorative hazelnut spikes; impressive, but tiny. For the March Daring bakers’ challenge, Korena from Korena in the Kitchen taught us that some treats are best enjoyed upside down. She challenged us to make a tarte tatin from scratch.
So I had some Oreos left over from making red velvet brownies with oreo cream cheese mousse the other day. Granted, I could have just eaten them, but it seemed like more fun to come up with something to bake with them (although what I came up with doesn’t actually involve any baking). I’ve been meaning to make some tarts for a while now and although I had been planning on making pastry bases, I decided to swap those for oreo biscuit bases, topped with salted caramel and chocolate mousse.
