The last few days I have achieved precisely nothing. The reason for this is three months old, loud, and prone to waking at 4am; aka my niece. I was babysitting for a couple of days and despite my best intentions to get some work done while she was here I failed miserably; if anyone can share the secret to taking care of a baby and dog whilst also working and doing the cooking and cleaning AND somehow managing to fit in some time to sleep please do share! The whole experience left me in need of something sweet, but fitting in baking and photography as well would have been a step too far! Unfortunately I made (and ate) these s’mores eclairs a couple of days before babysitting, so there were none left by the time I needed one! (more…)

Did you all have a good Easter? I spent most of mine seeing friends and starting a massive spring clean of the house; I say start because it took me four hours just to do the kitchen, after which I got fed up, gave up and took the dog for a walk to enjoy the sunshine (I went out without a coat!) so I’ve still got the rest of the house to do…it may take me a couple of weeks… I didn’t even do an Easter Sunday lunch this year, or eat any Easter chocolate (shocking I know), I did get in a spot of baking however; nothing particularly Easter-y but it does contain chocolate and is rather delicious – this chocolate, olive oil and rosemary cake with candied blood oranges. I have been on a serious pancake drive recently and have been craving them ALL THE TIME… I have pretty low willpower so needless to say I’ve been eating a lot of pancakes! I’ve been making loads of different kinds – banana spelt, apple rye and cinnamon, the classic crepes with lemon and sugar, broccoli and feta and these toasted coconut with chocolate fudge sauce and banana. I was originally just planning on making plain coconut pancakes but at the last minute decided to toast the coconut first; I am glad I did as it adds a whole extra depth of flavour. I then also decided that seeing as I was making that extra bit of effort that I needed to go the whole hog and make chocolate fudge sauce as well; again, an excellent decision. (more…)

I honestly thought that these brownies were going to be rubbish; this was my first time baking with coconut flour and I just made the recipe up as I went along. They didn’t look like anything much when I pulled them out of the oven and they don’t have that much coveted shiny, flaky brownie crust; but when I bit into one I was totally converted, they are extremely good. So rich, fudgy and chocolatey that they are practically indistinguishable from the best regular flour/refined sugar/butter laden brownies. And yet they are free from gluten, grains, refined sugar AND dairy and are made using several highly nutritious ingredients so you can enjoy a slice without feeling too guilty. (more…)

You wont catch me dead in a restaurant on Valentines day, as much as I enjoy eating out it really has to be the worst day of the year to do so – the overcrowding, the predictable, overpriced set menus, the air of awkward forced romance… No, a delicious meal at home with a bottle of wine (and/or some cocktails) is where it’s at; although what with having not one but two birthday parties to attend the day before Valentines, in all likelihood my partner and I will both be too tired and hungover to want to cook… but if anyone happens to want to come cook for us then this mini nutella stuffed chocolate chunk skillet cookie is what I want for dessert. Valentines day is fast approaching and while I have no plans to celebrate it personally (I’m not single, we just don’t really do Valentines), I will happily take any excuse to do a spot of baking, especially when said baking involves copious amounts of chocolate… So I made brownies, because a warm, gooey brownie topped with a generous dollop of ice cream would be my Valentines day dessert of choice. These brownies are elevated beyond regular brownie territory by the addition of  strawberries and cream flavoured Lindor truffles, which meld with the dense, fudgy brownie, creating pockets of strawberry and cream flavour. I’ve been trying to keep fairly healthy this month, and other than gradually polishing off the remains of the Christmas chocolates I’ve been doing quite well; I’m not dieting per se, just cutting back on the cakes and biscuits for a while. I still find myself in need of a daily mid-morning snack however, something that I can just grab and go and that satisfies any sweet cravings I may have. A granola bar fits the bill well but I think that when it comes to most shop bought versions they are not actually very healthy (or filling) so you may as well just be eating a bar of chocolate…so I made my own, and crammed them full of super healthy and filling ingredients.
