The other day I attempted to squeeze the bowl for my ice cream maker into the freezer, which resulted in me having to re-arrange the entire freezer and remove several items in order to fit it in (there may be an overabundance of cake in there…); that in turn led to me making these black forest meringue nests as I took out a tub of egg whites (which I always seem to have several of in there) and a packet of frozen cherries to make room for the bowl. The logical conclusion was meringues with cherry compote, at which point it seemed wrong not to add chocolate and some quark whipped cream to make sort of black forest mini pavlovas. (more…)

It is my 30th birthday tomorrow and I’m not particularly happy about it. I just don’t feel grown-up enough to be 30 years old; I still feel like I’m just bumbling through life without a clue what I’m actually doing (but then do you ever actually grow out of that feeling?). I know that “30 is just a number” and “you’re only as old as you feel” blah blah blah etc. etc, but I can’t quite shake the feeling of dread about saying goodbye to my twenties. So much for Summer; for the last week we’ve had nothing but grey skies and rain. It has been properly gloomy, but SO uncomfortably humid; especially at night, when we all, including Ringo the dog, have been struggling to sleep. There has been so much rain in fact that there has even been quite a bit of flooding near my house… in Birmingham! The gloomy weather and lack of sleep called for cake, chocolate cake to be specific. Dark, dense and richly flavoured chocolate stout cake, topped with a thick layer of silky-smooth stout ganache; grown-up chocolate cake heaven. (more…)

The last few days I have achieved precisely nothing. The reason for this is three months old, loud, and prone to waking at 4am; aka my niece. I was babysitting for a couple of days and despite my best intentions to get some work done while she was here I failed miserably; if anyone can share the secret to taking care of a baby and dog whilst also working and doing the cooking and cleaning AND somehow managing to fit in some time to sleep please do share! The whole experience left me in need of something sweet, but fitting in baking and photography as well would have been a step too far! Unfortunately I made (and ate) these s’mores eclairs a couple of days before babysitting, so there were none left by the time I needed one! (more…)

Did you all have a good Easter? I spent most of mine seeing friends and starting a massive spring clean of the house; I say start because it took me four hours just to do the kitchen, after which I got fed up, gave up and took the dog for a walk to enjoy the sunshine (I went out without a coat!) so I’ve still got the rest of the house to do…it may take me a couple of weeks… I didn’t even do an Easter Sunday lunch this year, or eat any Easter chocolate (shocking I know), I did get in a spot of baking however; nothing particularly Easter-y but it does contain chocolate and is rather delicious – this chocolate, olive oil and rosemary cake with candied blood oranges. Toasted Coconut Pancakes With Chocolate Fudge Sauce

Toasted coconut pancakes with chocolate fudge sauce and banana, a decadent breakfast or brunch.

I have been on a serious pancake drive recently and have been craving them ALL THE TIME… I have pretty low willpower so needless to say I’ve been eating a lot of pancakes! I’ve been making loads of different kinds – banana spelt, apple rye and cinnamon, the classic crepes with lemon and sugar, broccoli and feta and these toasted coconut with chocolate fudge sauce and banana. I was originally just planning on making plain coconut pancakes but at the last minute decided to toast the coconut first; I am glad I did as it adds a whole extra depth of flavour. I then also decided that seeing as I was making that extra bit of effort that I needed to go the whole hog and make chocolate fudge sauce as well; again, an excellent decision. (more…)
