Apple And Mincemeat Filo Wreath

Festive apple and mincemeat filo pastry strudel wreath - Domestic GothessChristmas is only a few days away now and I’m still not feeling festive…this is due in part to the fact that we don’t have a Christmas tree or any decorations up this year; we are in the process of renovating our house so it’s in a bit of a state and there was nowhere to put the tree. I intend to make up for it next year when the house is finished by going overboard with the decorations… I’m sure I will be in the Christmas spirit come Christmas day, which we are spending with a group of friends, and then Boxing Day will be spent with family. I am on dessert duty for both occasions (what a surprise!) and am planning on making chilled desserts that I can prepare the day beforehand as I wont be in my kitchen to bake anything on the day. So I wont be making this apple and mincemeat filo wreath as it needs to be eaten fresh from the oven (although I am partial to a slice of it cold, the following morning for breakfast). (more…)

Damson And Gin Sorbet

Damson and gin sorbet - Domestic Gothess I am lucky enough that both my parents and in-laws grow quite a lot of their own fruit and vegetables so in exchange for the odd pot of jam or bag of apples and pears from our own garden we often receive a carrier bag full of whatever has been newly harvested. Most recently it has been potatoes, pears, runner beans and damsons; the latter I deliberated for a while as to what I wanted to do with them, it was going to be either jam, gin or sorbet. In the end seeing as I had just made a big batch of blackberry jam I opted to combine the other two options and make damson and gin sorbet. (more…)

Creamy coconut milk and cardamom rice pudding with blackberry compote, vegan and lactose free - Domestic Gothess I’ve been on a bit of a compulsive blackberry picking drive recently; I can’t seem to take the dog for a walk without coming home with a bagful of blackberries, it just seems a shame to walk past the heavily laden brambles without at least nabbing a few… I have made jam (recipe coming soon!) and I’ve been eating an awful lot of blackberry compote, which is delicious with yoghurt or porridge, but I think I enjoyed it most when I paired it with this creamy, comforting coconut and cardamom rice pudding. Nectarine & Marzipan Galette

Nectarine & marzipan galette - Domestic GothessGalettes, also known as free-form pies or crostata, have to be just about one of the easiest things to make, it is in their nature to be rustic, so there’s no need to worry about trying to make it look neat and pretty; when it comes to a galette it is all about the flavour. They lend themselves well to pretty much any kind of fruit, so are the kind of thing that can be baked all year round; but are particularly good in Summer when there is an abundance of stone fruits and fresh berries. I opted to use nectarines, though peaches or plums would work just as well; and I couldn’t resist adding a bit of marzipan to the topping as almonds pair so well with stone fruits. I like to use cornmeal pastry for my galette crusts, as it adds a nice bit of extra crunch and deals better with the juice from the fruit. A perfectly crisp, golden crust, filled with juicy, sweet nectarines topped with marzipan crumble – heavenly. (more…)

For the June daring bakers challenge Rebecca from BakeNQuilt.com challenged us to make Charlotte Royale and Charlotte Russe from scratch. Savory or sweet Charlottes were definitely tasty showstopper

Mixed summer berry charlotte russe - Domestic GothessI think that this months Daring Bakers challenge has got to be my favourite one yet; we were challenged to make either a Charlotte Royale or a Charlotte Russe. For those of you who don’t know what those are, a Charlotte Royale is a dome shaped dessert made up of slices of jam filled swiss roll on the outside, filled with Bavarian cream; it looks somewhat brain-like… which is why I chose to make the Charlotte Russe, which is a ring of sponge fingers filled with Bavarian cream or mousse. I made my own sponge fingers, though you can use shop bought if you prefer. I was originally going to make a pear and caramel one, but then decided that there is so much beautiful fresh fruit around at the moment that it would be a shame not to use it, so went for mixed summer berry instead. It was so good though that I will definitely be making another at some point so will make pear and caramel next time. (more…)
