S’mores Eclairs & A Giveaway

S'mores eclairs - crisp, craquelin topped choux pastry fingers with toasted marshmallow creme patissiere, chocolate, toasted marshmallows & crushed digestive biscuit

The last few days I have achieved precisely nothing. The reason for this is three months old, loud, and prone to waking at 4am; aka my niece. I was babysitting for a couple of days and despite my best intentions to get some work done while she was here I failed miserably; if anyone can share the secret to taking care of a baby and dog whilst also working and doing the cooking and cleaning AND somehow managing to fit in some time to sleep please do share! The whole experience left me in need of something sweet, but fitting in baking and photography as well would have been a step too far! Unfortunately I made (and ate) these s’mores eclairs a couple of days before babysitting, so there were none left by the time I needed one! (more…)

Mini Nutella Stuffed Chocolate Chunk Skillet Cookie For Two

Mini nutella stuffed chocolate chunk skillet cookie for two - the perfect indulgent Valentines day dessert.

You wont catch me dead in a restaurant on Valentines day, as much as I enjoy eating out it really has to be the worst day of the year to do so – the overcrowding, the predictable, overpriced set menus, the air of awkward forced romance… No, a delicious meal at home with a bottle of wine (and/or some cocktails) is where it’s at; although what with having not one but two birthday parties to attend the day before Valentines, in all likelihood my partner and I will both be too tired and hungover to want to cook… but if anyone happens to want to come cook for us then this mini nutella stuffed chocolate chunk skillet cookie is what I want for dessert. Baileys Cheesecake With Baileys Ganache & A Flat White Martini

Baileys Irish Cream cheesecake with gingersnap crust & Baileys ganache and recipe for a Flat White Martini - Domestic Gothess I’ve always felt like New Years Eve falls too soon after Christmas; by that point I’ve had enough of celebrating and socialising and just want to hibernate for about a month with a duvet, stack of films and a supply of Christmas chocolates… And I certainly don’t want to go out to a packed bar or club with an hour long wait to get drinks; parties at home with friends are definitely my preferred form of celebrating. So I shall be doing just that for this New Years, though not at my own home, which is probably best as I wouldn’t want to have to clean up the next day! (more…)

Apple And Mincemeat Filo Wreath

Festive apple and mincemeat filo pastry strudel wreath - Domestic GothessChristmas is only a few days away now and I’m still not feeling festive…this is due in part to the fact that we don’t have a Christmas tree or any decorations up this year; we are in the process of renovating our house so it’s in a bit of a state and there was nowhere to put the tree. I intend to make up for it next year when the house is finished by going overboard with the decorations… I’m sure I will be in the Christmas spirit come Christmas day, which we are spending with a group of friends, and then Boxing Day will be spent with family. I am on dessert duty for both occasions (what a surprise!) and am planning on making chilled desserts that I can prepare the day beforehand as I wont be in my kitchen to bake anything on the day. So I wont be making this apple and mincemeat filo wreath as it needs to be eaten fresh from the oven (although I am partial to a slice of it cold, the following morning for breakfast). (more…)

Slow Cooker Chocolate Caramel Ginger Cheesecake & A Giveaway

Slow cooker chocolate caramel ginger baked cheesecake - Domestic GothessI have only recently discovered the joys of a slow cooker – the ability to just throw everything into a pot, abandon it and come back hours later to a delicious meal. Slow cookers aren’t just good for meat and stews though, you can cook a lot of things in there that you maybe wouldn’t think to; things like brownies, macaroni cheese, porridge, steamed puddings and cheesecake…. Damson And Gin Sorbet

Damson and gin sorbet - Domestic Gothess I am lucky enough that both my parents and in-laws grow quite a lot of their own fruit and vegetables so in exchange for the odd pot of jam or bag of apples and pears from our own garden we often receive a carrier bag full of whatever has been newly harvested. Most recently it has been potatoes, pears, runner beans and damsons; the latter I deliberated for a while as to what I wanted to do with them, it was going to be either jam, gin or sorbet. In the end seeing as I had just made a big batch of blackberry jam I opted to combine the other two options and make damson and gin sorbet. (more…)

Chocolate, Salted Caramel And Hazelnut Tarts

Dark chocolate, salted caramel and hazelnut tartlets with chocolate crunch and cremeuxIt feels like an absolute age since I last posted! I don’t think I have ever actually gone this long without posting since I first started the blog… I have to admit that I quite enjoyed being lazy and having a bit of a break from blogging and although I am eager to get back into it I am finding it a little difficult to get back into the swing of things! I do have a cracker of a recipe for you today to start me off and ease me back into it though. (more…)

Coconut & Cardamom Rice Pudding With Blackberry Compote

Creamy coconut milk and cardamom rice pudding with blackberry compote, vegan and lactose free - Domestic Gothess I’ve been on a bit of a compulsive blackberry picking drive recently; I can’t seem to take the dog for a walk without coming home with a bagful of blackberries, it just seems a shame to walk past the heavily laden brambles without at least nabbing a few… I have made jam (recipe coming soon!) and I’ve been eating an awful lot of blackberry compote, which is delicious with yoghurt or porridge, but I think I enjoyed it most when I paired it with this creamy, comforting coconut and cardamom rice pudding.
