Vegan ginger bundt cake with lime glaze and macerated strawberries – a moist, spicy, easy to make cake served with juicy strawberries; perfect for afternoon tea! Post sponsored by JING.
Flavour pairings is a fascinating subject – working out what ingredients go together, whether complementary or contrasting; and what should be served with what for the best possible combination and taste experience. It is a topic that I enjoy researching and experimenting with, so when the lovely people at JING Tea asked me to come up with an afternoon tea recipe to pair with their new Green Apple and Hibiscus herbal tea, I happily took on the challenge and came up with this vegan ginger bundt cake. Mincemeat, marzipan and apple bread wreath – an impressive festive centrepiece full of Christmassy flavours.
One last post before Christmas! This mincemeat, marzipan and apple bread wreath is an impressive centrepiece that would be perfect for a festive breakfast. I somehow ended up with about five jars of mincemeat leftover from making various things and there are only so many mince pies that one can eat (though that number is rather high); so I decided to make this bread wreath instead. Lighter mince pies – you can enjoy a festive mince pie even if you are trying to cut down on the sweet stuff as these ones have no added sugar, are lower in calories and vegan too! Post sponsored by Splenda.
Mince pies are one of my absolute favourite festive foods; I dread to think how many of them I get through over the festive period! (I actually had my first mince pie of the year in July, at a Christmas in July event!). For me it wouldn’t be Christmas without them, but they are quite high in sugar and fat, and therefore calories; so I’ve come up with this lighter version that cuts down on the sugar and fat whilst still being delicious! Orange cinnamon butter biscuits – crisp, buttery, melt-in-the-mouth festive cookies that make great cut-outs for Christmas.
I’ve been having a lot of fun making and decorating Christmas biscuits this week. The decorating part is quite time consuming if you are trying to do it really neatly and you have a lot of biscuits to get through, but I find it quite relaxing and it is a nice way to while away a cold, wet afternoon.
