It never feels like Christmas is close for me until I’ve had my first mince pie; they are an absolute essential in making me feel festive and I love them. While I enjoy most mince pies, shop bought or otherwise, as with most things you just can’t beat homemade ones, and if you do make your own then you get the bonus of festive baking, which always helps to put me in a Christmassy mood. If you are going to go through the effort of making your own (and they really aren’t that much effort at all), then you might as well make your own mincemeat too – again, homemade is so much better than shop bought. Are you prepared for Christmas yet? So it is somehow December already and I have done no Christmas shopping or planning whatsoever; I wont be hosting Christmas lunch (my house is essentially a building site at the moment) but I do need to make dessert and some Christmassy nibbles. I haven’t had as much fun in the kitchen in a long time as I had making these mini bleeding heart Halloween cakes; yes I am still trying to clean the food colouring off my hands and worktops but it was a fun and almost therapeutic craft project. The hearts are the brainchild of Lily Vanilli, an incredibly talented baker and author who originally designed the hearts as an anti-valentines cake. I thought they would be great for Halloween and would look even more impressive placed on top of mini red velvet layer cakes with a cascade of ganache ‘blood’ down the side. (more…)

I was initially dreading the end of Summer but it has to be said that there are some appealing aspects to Autumn – the pretty coloured leaves, big jumpers, Halloween, hot (alcoholic) drinks, soup, but most of all the warmly spiced baked goods. I love using spices in baking, and while I do use them year round, it feels so much more appropriate to be heavy handed with them in Autumn and Winter. So now it’s October (how already?!) I think it’s acceptable to start posting Halloween things. I love coming up with Halloweeny bakes, it’s a chance to let my gothic creativity run wild and I have so many ideas that there’s no way I’ll be able to make them all. I actually made this cake a couple of weeks ago but have been waiting till October to post it; I wasn’t quite sure what to call it – meringue bone garden? Pile? Graveyard? In the end I went with palace but any of the former would fit. The best part about any holiday or celebration is the food, and more specifically, the baked goods; cakes and breads feels so much more special if you only consume them once a year. My favorite Easter bake is hot cross buns, though I do also love Simnel cake, but I have a particularly weak spot for sweet enriched breads. I generally bake at least one batch of hot cross buns around Easter time every year; I decided to do something a little different this year though and baked a hot cross bun loaf using my hokkaido milk bread recipe as the base. Valentines day is fast approaching and while I have no plans to celebrate it personally (I’m not single, we just don’t really do Valentines), I will happily take any excuse to do a spot of baking, especially when said baking involves copious amounts of chocolate… So I made brownies, because a warm, gooey brownie topped with a generous dollop of ice cream would be my Valentines day dessert of choice. These brownies are elevated beyond regular brownie territory by the addition of  strawberries and cream flavoured Lindor truffles, which meld with the dense, fudgy brownie, creating pockets of strawberry and cream flavour.
