I have come down with a stinking cold. I don’t get ill very often, maybe about once every five years; so when I do catch a cold it really hits me hard. I have been struggling to do much at all but I have work and diy to be getting on with and Ringo to walk so I’ve spent a lot less time resting than I would like to. It has meant that I really haven’t felt like cooking but I still need tasty, nourishing food, fast! Does anyone else struggle to return to normal life after they have been away somewhere? After being at a festival at the weekend we then had to drive for four hours to pick Ringo up from my parents house, then another four hours home and it has all completely wiped me out. I feel like I need to sleep for a week but I have so much that I need to be getting on with that that really isn’t an option! (more…)
What are your go-to meals? The ones that you cook frequently, pretty much know the recipe for off by heart and that never disappoint. These sweetcorn and feta fritters are one of mine and I cook them, or a variation of them, probably once every few weeks. Our kitchen renovation is coming along well, if a little slowly. We now actually have a sink downstairs (having to go all the way up to the third floor to get water was getting rather tiring and it made it so much more difficult to make a cup of tea than it should be!), we have done most of the hard labour, and I had a shiny new range cooker installed yesterday. Pretty much all that is left to do is painting and tiling, as well as the monumental task of organising all of my baking supplies and photography props… (more…)

Here in the UK we have been enjoying a bit of a heatwave for the past few days. It is lovely to have some sun at last, but I am struggling a bit in the heat; it has made me incredibly unproductive! I’ve been eating lots of ice cream and smoothies to keep me cool and also because I really haven’t felt like cooking as it is so hot. I am planning on making a batch of these crispy shrimp tacos with chipotle red cabbage slaw tomorrow as there is minimal cooking involved – just a few minutes of frying the prawns. And they are exactly the kind of thing that you want to eat al fresco on a hot Summer evening accompanied by a cold beer (or a margarita!). (more…)
Despite being a food blogger there do seem to be a lot of days where I just don’t have time to cook, or simply don’t feel like cooking. I am loathe to rely on ready meals or takeaways however, so quick and simple meals like this easy mushroom linguine are my go-to on those kinds of days. (more…)
Although I do really like making my own pizza from scratch, including the dough; it can be a bit of a faff and takes a while. Not good if you are hungry and craving pizza fast! I am not a fan of shop bought pizza bases, but one really good ready-made solution is naan bread; it makes the perfect pizza base and because it is pre-baked you simply need to melt your cheese to finish off your pizza. I made this tart some time ago now but have only just gotten round to posting it; I say tart, but quiche may be a more accurate name given that it has an egg filling. Opinions seem to be vague and varied on the exact definition of each; a quiche must have an egg filling, a tart can have an egg filling but doesn’t have to seems to be the bottom line. Either way and whatever you want to call it, this tart/quiche is absolutely delicious and incredibly beautiful. (more…)
The other day I shared my recipe for tangzhong burger buns and promised I would be sharing a burger recipe to go with them; well here it is – sun-dried tomato chickpea burgers. These are totally vegetarian/vegan burgers that are easy to make, delicious and very satisfying. I served the burgers alongside some amazing home-made beer battered onion rings which were utterly addictive and so much better than shop bought ones. (more…)
