Red lentil dhal with roasted cauliflower & butternut squash – an easy, healthy, delicious vegan meal that is good all year round! Post sponsored by Appletiser.
Dhal (or dahl or dal) is one of my go-to meals; it is easy to make, satisfying and very healthy. It is just as delicious eaten outside in the sunshine as it is when eaten wrapped up in a blanket on a cold day. Which is perfect for this awkward time of year, when the weather could go either way. Spiced black beans and callaloo with coconut rice and plantain is one of my absolute favourite quick and easy meals that I like to make whenever I am a bit short on time but still want a healthy meal that is tasty, satisfying and big on flavour. (more…)
Chickpea and lentil stuffed aubergines – a tasty, healthy vegetarian meal that looks impressive but is really easy to make! Post sponsored by Appletiser.
Aubergines are one of my favourite vegetables, as long as they are properly cooked of course; a spongy, undercooked aubergine is a sad thing indeed. These chickpea and lentil stuffed aubergines make great use of the vegetable for a meal that is not only delicious and easy to make but is healthy and looks very impressive too. (more…)
Peanut tofu stir fry – tasty tofu and veggies in a delicious, creamy peanut butter sauce. An easy, healthy, yummy vegan meal. Post sponsored by Circulon.
Stir fries have got to be one of the most versatile meals there is. Perfect for if you need a quick, healthy meal, if you are on a budget, and for vegans and carnivores alike. My absolute favourite kind of stir fry, and one that I make most often, is one with a peanut butter sauce, like this delicious vegan peanut tofu stir fry. (more…)
Sweet potato black bean chilli – a hearty, warming, yet healthy and delicious vegan meal. Quick and easy to make too!
I suppose that my first recipe of 2018 should probably be a healthy one; start the year off as you mean to go on and all that. Well I certainly hope that my year doesn’t continue as it’s started – with a horrible cold! Here’s hoping that some healthy, nourishing meals like this sweet potato black bean chilli have me feeling better quickly. (more…)
Crispy potato latkes with smoked salmon and chive sour cream – a delicious breakfast or brunch recipe that can easily be prepped ahead of time. Post sponsored by Co-op.
I have done so many sweet recipes recently that savoury ones haven’t had much of a look in (it’s not my fault that there are so many Christmassy things that I want to bake!); but I couldn’t not share the recipe for these crispy potato latkes with smoked salmon and chive sour cream with you. They are incredibly good – the entire batch was devoured very quickly after I was done taking photos, and I think that they would make a great Christmas morning breakfast, or Christmas dinner starter. Vegetable tagine with almond and chickpea couscous – an easy, healthy vegetarian/vegan meal with tonnes of flavour. Post sponsored by Appletiser.
Various types of vegetable soups and stews feature heavily in my kitchen during the winter. This tagine is one of my favourites as it feels more rich and special than a regular stew and has a really wonderful sweet/spicy flavour. (more…)
Ratatouille risotto – a creamy, flavourful vegetarian risotto loaded with ratatouille vegetables. Post sponsored by Essential Cuisine.
It seems strange that this is the first risotto recipe that I have shared on here as I make it a lot and it is one of my favourite meals. As a vegetarian, risotto used to be ‘the’ (as in, the only) vegetarian option on most menus. Thankfully, the majority of restaurants have become a lot more accommodating towards vegetarians and vegans and the options are much more plentiful nowadays. The years of having risotto as pretty much my only choice when eating out haven’t put me off it however and I still eat it a lot at home, if not quite as often when eating out anymore. (more…)
Vegetarian breakfast pizza – enjoy pizza (or breakfast) at any time of day!
If I had to pick one favourite food I think it would have to be pizza (with ice cream for dessert!). I think that I could probably eat pizza every day and not get bored of it; and now I’ve come up with a pizza recipe that means that I can have it for breakfast as well as lunch or dinner! And no, I’m not talking about cold leftover pizza! (more…)
Vegetarian mushroom meatballs – these moist, herby, delicious meatless ‘meatballs’ taste amazing with tomato sauce and pasta and are the perfect healthy comfort food.
The weather the last couple of days has been utterly foul. Non-stop rain all day and the darkest, gloomiest skies. Comfort food is definitely in order and these vegetarian mushroom meatballs are just the thing. Spaghetti with tomato sauce, meatballs and plenty of cheese has to be one of the ultimate comfort foods and it is really easy to make an amazing tasting vegetarian (or even vegan) version of the classic.
