I have porridge for breakfast most weekdays (I am half Scottish after all, though I don’t go as far as making it the way my dad insists is traditional, with just oats, water and salt). But at the weekends I like to have a bit more of an indulgent breakfast. I love pancakes and waffles with all the toppings, but they don’t lend themselves particularly well to a healthy eating plan. I am a big believer in balance, so I think that an indulgent breakfast every now and again is perfectly alright, as well as regular slices of cake; but I wanted to come up with something that fit both bills – decadent but good for you. Apart from my mincemeat bundt cake and a few biscuits and things left over from Christmas I have been doing fairly well so far this year at eating healthily (and yes I know it hasn’t been very long yet, shush you!); I’ve been making lots of soups and stews, stocked up on veg and have put all the packets of lentils at the back of the cupboard to good use. There is no denying that I have a sweet tooth though and I crave a little something sweet after most meals; usually a couple of squares of dark chocolate is enough to satisfy the craving however and has the bonus of actually being good for me. After making my own mincemeat recently I found myself with rather a lot of it! There are only so many mince pies a girl can eat (though that number may be quite high), so I tried to think of some other ways to use some of it up. The best way I came up with was these mincemeat and marzipan cinnamon buns, which also helpfully used up the marzipan leftover from covering my Christmas cake. (more…)

I honestly thought that these brownies were going to be rubbish; this was my first time baking with coconut flour and I just made the recipe up as I went along. They didn’t look like anything much when I pulled them out of the oven and they don’t have that much coveted shiny, flaky brownie crust; but when I bit into one I was totally converted, they are extremely good. So rich, fudgy and chocolatey that they are practically indistinguishable from the best regular flour/refined sugar/butter laden brownies. And yet they are free from gluten, grains, refined sugar AND dairy and are made using several highly nutritious ingredients so you can enjoy a slice without feeling too guilty. (more…)

Cherry Almond Chia Pudding

Chia pudding with almond milk, honey and vanilla served with a tart cherry compote and toasted flaked almonds; a healthy, filling make-ahead breakfast.

I was given a big tub of chia seeds by my aunt a while back and so far haven’t come up with many ways to use them; some went into (very tasty) granola bars but I wasn’t sure what else to do with them, any suggestions would be most welcome! The most common chia based recipe seems to be chia pudding so I thought I’d give it a go; I honestly thought that I was going to hate it, it just seems like such a strange concept and it looks like a bazillion little eyeballs, but actually I really quite enjoyed it! That doesn’t mean that it isn’t odd, this stuff is weird with a capital W and it certainly won’t be to everyone’s tastes…Damian thought that it was disgusting and I have to agree that the texture is somewhat reminiscent of frogspawn (I don’t think that I’m doing a very good job of selling it…); but if you can get past that then it is really quite tasty and incredibly healthy! I’ve been trying to keep fairly healthy this month, and other than gradually polishing off the remains of the Christmas chocolates I’ve been doing quite well; I’m not dieting per se, just cutting back on the cakes and biscuits for a while. I still find myself in need of a daily mid-morning snack however, something that I can just grab and go and that satisfies any sweet cravings I may have. A granola bar fits the bill well but I think that when it comes to most shop bought versions they are not actually very healthy (or filling) so you may as well just be eating a bar of chocolate…so I made my own, and crammed them full of super healthy and filling ingredients. Happy New Year! This is my first post of 2016 so it kind of had to be a healthy one really.
