Mini chocolate layer cake with nutella ganache & hazelnut praline - Domestic GothessIt was my fiance’s birthday last week so obviously there had to be cake, we didn’t really do anything to celebrate though so there were just the two of us to eat said cake, and as much as I like making big, fancy cakes it is not a great idea to have a massive cake when there are only two of you to eat it… So I set out to make a more manageable sized one…I came up with this mini chocolate layer cake with nutella ganache, hazelnut praline and decorative hazelnut spikes; impressive, but tiny. Muesli Bread

Muesli bread, the perfect healthy, filling breakfast - Domestic GothessI think I may have found a new favourite bread; this muesli bread is hearty, satisfying, delicious and it’s healthy! It is also a great way to use up some of that half eaten packet of muesli forgotten about at the back of the cupboard for 6+ months… (just me?). It stays soft for a good few days in a airtight container and makes fantastic toast; I’ve been enjoying it for breakfast slathered with butter and jam. The flavour is slightly sweet from the dried fruit and a little maple syrup and there’s a hint of warm cinnamon. Because it is full of oats, fruit and nuts it is very filling, so it makes a great breakfast or snack. (more…)

Nectarine & Marzipan Galette

Nectarine & marzipan galette - Domestic GothessGalettes, also known as free-form pies or crostata, have to be just about one of the easiest things to make, it is in their nature to be rustic, so there’s no need to worry about trying to make it look neat and pretty; when it comes to a galette it is all about the flavour. They lend themselves well to pretty much any kind of fruit, so are the kind of thing that can be baked all year round; but are particularly good in Summer when there is an abundance of stone fruits and fresh berries. I opted to use nectarines, though peaches or plums would work just as well; and I couldn’t resist adding a bit of marzipan to the topping as almonds pair so well with stone fruits. I like to use cornmeal pastry for my galette crusts, as it adds a nice bit of extra crunch and deals better with the juice from the fruit. A perfectly crisp, golden crust, filled with juicy, sweet nectarines topped with marzipan crumble – heavenly. (more…)

Red Wine Poached Pear & Chocolate Frangipane Tarts

Spiced red wine poached pear & chocolate frangipane tarts with chocolate pastryI debated for a while as to whether I should actually publish this post or not…I just wasn’t entirely happy with the appearance of the tarts, I couldn’t help but feel that the pears turned out looking somewhat slug-like…In the end though taste won out. What they lack in looks they make up for in flavour. Sweet pears poached in a spiced red wine syrup are baked with rich chocolate frangipane in a crisp chocolate pastry crust. When topped with a dollop of ice cream and an extra drizzle of spiced red wine syrup they are heavenly. (more…)

Tahini Biscuits

tahini biscuitsI’ve had a couple of jars of tahini sitting in the back of my cupboard for at least a year now; beyond making houmous I’m not too sure what to do with it as I don’t really like it by itself, if anyone has any suggestions as to what can be done with it please let me know! I figured that I could use it in the same way as peanut butter, so used some up making this sesame take on the classic peanut butter biscuit. I think i may like the result even more than the original! They are perfectly crisp and melt in the mouth with a delicate sesame flavour. (more…)
