Beetroot is such a versatile vegetable and is also incredibly good for you, not to mention it’s beautiful, intense colour. Despite the fact that it is one of my favourite vegetables, I don’t think that I have a single recipe using it on the blog! (Until now). That’s a shame because there are so many brilliant ways to use it, from soup to chocolate cake; I will make sure that I remember to post more recipes using beetroot from now on. (more…)

I think that pizza might be my all-time favourite food (of the savoury variety at least). If I had to pick a final meal (lets hope it doesn’t come to that!), then it would almost certainly be pizza followed by ice cream. As much as I love a good takeaway pizza (who doesn’t?!), you can’t beat the home-made kind; I have several varieties of pizza that I make regularly, but this mushroom pesto pizza gets made the most frequently. Can you believe that until I made these manuka honey coconut ice cream sandwiches I hadn’t had an ice cream sandwich since I was about 13 years old?! That’s nearly twenty years – unacceptable! I’m not sure why, I guess they just haven’t really been on my radar; which is a shame because after making these ones I was reminded of just how good they are, and how much fun they are to eat. Spring is just about here, and with it comes an abundance of fresh produce, in particular, green things! This super green spaghetti with lemony rocket & walnut pesto, asparagus, peas and goat’s cheese makes great use of a few of spring’s best vegetables – asparagus, peas (ok, so I cheated on the pea front and used frozen ones, but it would be even better with fresh) and rocket. So apparently this week is #NationalPieWeek (or #BritishPieWeek, I don’t know which is the official one); there are so many national food days/weeks that I rarely know that they are happening until it’s too late and I’m not particularly interested in them anyway (except pancake day – that’s different), but it had been a very long time since I last made a pie so I took it as an excuse to bake one. There are definite signs of spring in the air and I’ve spotted plenty of flowers starting to bloom while out on my daily dog walks; but the weather is still decidedly wet and chilly and I am not quite out of the craving comfort foods stage yet. Bean burgers are a staple in most vegetarian diets but it can be difficult to find a good recipe, many of them end up being a little, shall we say, squishy? As in they have a tendency to fall apart when you cook them. More bloomin’ pancakes! I promise that once pancake day is over I will share something that isn’t pancakes, but for now I can’t get enough of them! These ones are baklava inspired – the sweet, syrupy, nutty filo pastry treat in pancake form. These are thick, soft, fluffy American-style pancakes made with Greek yogurt to keep them extra moist and pack in some protein and they are flavoured with cardamom, cinnamon and chopped nuts with a delicious sweet syrup with hints of lemon, orange blossom water and rose. It’s nearly the second best day of the year (after Christmas) – pancake day! I love pancakes in all forms and make them regularly, for breakfast, dessert, dinner (savory or sweet ones!) or a snack; they are infinitely adaptable, easy to make and one of my favourite foods. I realised that I hadn’t really posted any dessert pancakes on the blog, just breakfasty ones; so I am remedying that with these indulgent pancakes with caramel oranges and almond ice cream. (more…)
