I have done so many sweet recipes recently that savoury ones haven’t had much of a look in (it’s not my fault that there are so many Christmassy things that I want to bake!); but I couldn’t not share the recipe for these crispy potato latkes with smoked salmon and chive sour cream with you. They are incredibly good – the entire batch was devoured very quickly after I was done taking photos, and I think that they would make a great Christmas morning breakfast, or Christmas dinner starter. More bloomin’ pancakes! I promise that once pancake day is over I will share something that isn’t pancakes, but for now I can’t get enough of them! These ones are baklava inspired – the sweet, syrupy, nutty filo pastry treat in pancake form. These are thick, soft, fluffy American-style pancakes made with Greek yogurt to keep them extra moist and pack in some protein and they are flavoured with cardamom, cinnamon and chopped nuts with a delicious sweet syrup with hints of lemon, orange blossom water and rose. It’s nearly the second best day of the year (after Christmas) – pancake day! I love pancakes in all forms and make them regularly, for breakfast, dessert, dinner (savory or sweet ones!) or a snack; they are infinitely adaptable, easy to make and one of my favourite foods. I realised that I hadn’t really posted any dessert pancakes on the blog, just breakfasty ones; so I am remedying that with these indulgent pancakes with caramel oranges and almond ice cream. (more…)
I have porridge for breakfast most weekdays (I am half Scottish after all, though I don’t go as far as making it the way my dad insists is traditional, with just oats, water and salt). But at the weekends I like to have a bit more of an indulgent breakfast. I love pancakes and waffles with all the toppings, but they don’t lend themselves particularly well to a healthy eating plan. I am a big believer in balance, so I think that an indulgent breakfast every now and again is perfectly alright, as well as regular slices of cake; but I wanted to come up with something that fit both bills – decadent but good for you. I have been on a serious pancake drive recently and have been craving them ALL THE TIME… I have pretty low willpower so needless to say I’ve been eating a lot of pancakes! I’ve been making loads of different kinds – banana spelt, apple rye and cinnamon, the classic crepes with lemon and sugar, broccoli and feta and these toasted coconut with chocolate fudge sauce and banana. I was originally just planning on making plain coconut pancakes but at the last minute decided to toast the coconut first; I am glad I did as it adds a whole extra depth of flavour. I then also decided that seeing as I was making that extra bit of effort that I needed to go the whole hog and make chocolate fudge sauce as well; again, an excellent decision. (more…)

I often buy bananas with the intention of letting them go brown and overripe as I love to bake with them; they are horrible to eat as they are, but mash them up and mix them into cake, or milkshake, or pancakes and they become something truly delicious. The smell of banana bread baking is utterly irresistible; when I don’t want to wait for banana bread to bake though, banana pancakes are the next best thing. They are super quick and easy to make, taste amazing and are much healthier than cake! (more…)
When I was sent an OXO Good Grips non stick frying pan (£50 from Lakeland) to review I knew exactly what to make in it to test it – pancakes! they are one of the best (and tastiest) ways to test just how non stick a pan is, if you can flip a pancake cleanly then it’s a goodun. The Good Grips frying pan was perfect for pancakes – I only had to use the teeniest smidge of butter to cook them in and they didn’t stick at all. It felt very solidly made, with the kind of non-stick coating that isn’t just going to flake off after a couple of uses (I’ve bought some very cheap and crappy cookware in the past…always a false economy) and I was impressed by the addition of a silicone handle in place of the usual plastic which means that the pans are oven-proof up to 200°C, a bonus for me as I didn’t actually own a single frying pan that could go in the oven… And if you are lucky enough to own a dishwasher, it is dishwasher safe and suitable for use on induction hobs. I don’t fast. I believe that life is too short for unnecessary self-deprivation; I also have never given anything up for Lent, firstly because I am not remotely religious, secondly, because I am not dangerously addicted to anything; and if I were, I should really be giving it up for life, not for just for Lent. I am however (funnily enough…) more than happy to partake in the feasting that often precedes or follows a fast. Shrove Tuesday, or pancake day, is one of those such occasions that I am willing to revel in. Pancakes, in all of their many forms, are one of the most simple and satisfying foods you can make, and are the best way to create an impressive breakfast or brunch (or dinner!). As much as I love the classic British pancake with lemon and sugar, or a stack of fluffy American ones drizzled with maple syrup, if you want to make an impressive breakfast with minimal amount of effort (no standing at the stove flipping endless pancakes) then it’s got to be a Dutch baby.
