Vanilla Almond Milk Porridge With Honey Roasted Pear

Vanilla amond milk porridge with honey roast pear, cinnamon and hazelnuts. Dairy free and easily adaptable to be vegan. I had never tried almond milk up until a couple of days ago when I saw that it was on offer and bought some on a whim. I didn’t think that I would really like it but was interested to try…and now I’m hooked! It’s surprisingly delicious, though not for everyone; Damian tried it and proclaimed it to be “really weird, and the taste didn’t fit the texture”, whatever that means…he’s odd. I don’t think I would ever want it in my tea, but I would now rather drink a glass of almond milk as opposed to regular milk, and almond milk hot chocolate is something of a revelation. (more…)

Autumnal dark chocolate, pear, hazelnut and cinnamon cake with dark chocolate ganacheLately I have been feeling like time has been rushing past me at an unbelievable rate, I’ve been struggling to find enough time to get everything done and I have to admit that I have let things like cleaning the house slide a little as I struggle to fit everything in… I’m not even particularly busy, there are just so many little tasks that all add up into an overwhelming mass and I have been tired and inefficient. Red Wine Poached Pear & Chocolate Frangipane Tarts

Spiced red wine poached pear & chocolate frangipane tarts with chocolate pastryI debated for a while as to whether I should actually publish this post or not…I just wasn’t entirely happy with the appearance of the tarts, I couldn’t help but feel that the pears turned out looking somewhat slug-like…In the end though taste won out. What they lack in looks they make up for in flavour. Sweet pears poached in a spiced red wine syrup are baked with rich chocolate frangipane in a crisp chocolate pastry crust. When topped with a dollop of ice cream and an extra drizzle of spiced red wine syrup they are heavenly. (more…)

Spiced Poached Pear and Frangipane Brioche Tarts

This recipe took a couple of go’s to get right, the first time I made them, the tarts were delicious but the frangipane sort of exploded and spread everywhere, they tasted good but looked a mess. I was determined to get them right and not be defeated by a tart; so I tried again with a few tweaks and they turned out beautifully! (more…)
