Crispy Shrimp Tacos With Chipotle Red Cabbage Slaw

crispy shrimp (prawn) tacos with chipotle red cabbage slaw

Here in the UK we have been enjoying a bit of a heatwave for the past few days. It is lovely to have some sun at last, but I am struggling a bit in the heat; it has made me incredibly unproductive! I’ve been eating lots of ice cream and smoothies to keep me cool and also because I really haven’t felt like cooking as it is so hot. I am planning on making a batch of these crispy shrimp tacos with chipotle red cabbage slaw tomorrow as there is minimal cooking involved – just a few minutes of frying the prawns. And they are exactly the kind of thing that you want to eat al fresco on a hot Summer evening accompanied by a cold beer (or a margarita!). (more…)

ten minute naan pizza - super quick, tasty pizza made using shop bought naan bread; ready in 10 minutes!

Although I do really like making my own pizza from scratch, including the dough; it can be a bit of a faff and takes a while. Not good if you are hungry and craving pizza fast! I am not a fan of shop bought pizza bases, but one really good ready-made solution is naan bread; it makes the perfect pizza base and because it is pre-baked you simply need to melt your cheese to finish off your pizza. Mushroom pâté - a tasty vegetarian mushroom pâté made with dried porcini mushrooms for extra flavour. Great as a starter, canape or sandwich filling.

It may be a bit unfashionable and outdated, but I really like pâté. Not the meaty kind of course, but vegetarian and fish pâtés can be really tasty, and they make a great starter, canape, snack or sandwich filling. After ending up with an excess of mushrooms the other day I decided to make something a little different with them and whipped up this tasty vegetarian mushroom pâté. (more…)

Asparagus, Pea And Feta Cheese Tart

Asparagus, pea and feta cheese tart (quiche).

Asparagus, pea and feta cheese tart (quiche).

I made this tart some time ago now but have only just gotten round to posting it; I say tart, but quiche may be a more accurate name given that it has an egg filling. Opinions seem to be vague and varied on the exact definition of each; a quiche must have an egg filling, a tart can have an egg filling but doesn’t have to seems to be the bottom line. Either way and whatever you want to call it, this tart/quiche is absolutely delicious and incredibly beautiful. (more…)

Sun-dried Tomato Chickpea Burgers & Beer Battered Onion Rings

Sun-dried tomato chickpea burgers and beer battered onion rings - delicious vegetarian/vegan burgers served with the most amazing onion rings!

The other day I shared my recipe for tangzhong burger buns and promised I would be sharing a burger recipe to go with them; well here it is – sun-dried tomato chickpea burgers. These are totally vegetarian/vegan burgers that are easy to make, delicious and very satisfying. I served the burgers alongside some amazing home-made beer battered onion rings which were utterly addictive and so much better than shop bought ones. (more…)

Roasted Red Pepper And Chilli Hummus With Home-Made Pitta Chips

Roasted red pepper and chilli hummus with home-made seasoned pitta chips. Easy to make and the perfect snack!

Roasted red pepper and chili hummus with home-made seasoned pitta chips. Easy to make and the perfect snack!

I adore hummus, and always have done. One of my favourite lunches is a pot of hummus with some crusty bread and vegetable sticks for dipping, I will happily eat the entire tub in one sitting. While I do often buy hummus (I’m lazy), it is so quick and easy to make your own and that way you can control the flavours to get the balance of lemon, garlic and olive oil that suits you. (more…)

Baby beetroot and goat's cheese tarte tatin - sweet, tangy beetroot with cheddar puff pastry and creamy goats cheese.

Beetroot is such a versatile vegetable and is also incredibly good for you, not to mention it’s beautiful, intense colour. Despite the fact that it is one of my favourite vegetables, I don’t think that I have a single recipe using it on the blog! (Until now). That’s a shame because there are so many brilliant ways to use it, from soup to chocolate cake; I will make sure that I remember to post more recipes using beetroot from now on. (more…)

Mushroom pesto pizza - easy home made vegetarian pizza topped with garlic mushrooms, basil pesto and plenty of mozzarella and cheddar cheese.

I think that pizza might be my all-time favourite food (of the savoury variety at least). If I had to pick a final meal (lets hope it doesn’t come to that!), then it would almost certainly be pizza followed by ice cream. As much as I love a good takeaway pizza (who doesn’t?!), you can’t beat the home-made kind; I have several varieties of pizza that I make regularly, but this mushroom pesto pizza gets made the most frequently. Spaghetti with lemon rocket and walnut pesto, asparagus, peas and goats cheese - quick, easy and perfect for Spring!

Spring is just about here, and with it comes an abundance of fresh produce, in particular, green things! This super green spaghetti with lemony rocket & walnut pesto, asparagus, peas and goat’s cheese makes great use of a few of spring’s best vegetables – asparagus, peas (ok, so I cheated on the pea front and used frozen ones, but it would be even better with fresh) and rocket.
