Vegetable tagine with almond and chickpea couscous – an easy, healthy vegetarian/vegan meal with tonnes of flavour. Post sponsored by Appletiser.
Various types of vegetable soups and stews feature heavily in my kitchen during the winter. This tagine is one of my favourites as it feels more rich and special than a regular stew and has a really wonderful sweet/spicy flavour. (more…)
Ratatouille risotto – a creamy, flavourful vegetarian risotto loaded with ratatouille vegetables. Post sponsored by Essential Cuisine.
It seems strange that this is the first risotto recipe that I have shared on here as I make it a lot and it is one of my favourite meals. As a vegetarian, risotto used to be ‘the’ (as in, the only) vegetarian option on most menus. Thankfully, the majority of restaurants have become a lot more accommodating towards vegetarians and vegans and the options are much more plentiful nowadays. The years of having risotto as pretty much my only choice when eating out haven’t put me off it however and I still eat it a lot at home, if not quite as often when eating out anymore. (more…)
Vegetarian breakfast pizza – enjoy pizza (or breakfast) at any time of day!
If I had to pick one favourite food I think it would have to be pizza (with ice cream for dessert!). I think that I could probably eat pizza every day and not get bored of it; and now I’ve come up with a pizza recipe that means that I can have it for breakfast as well as lunch or dinner! And no, I’m not talking about cold leftover pizza! (more…)
Vegetarian mushroom meatballs – these moist, herby, delicious meatless ‘meatballs’ taste amazing with tomato sauce and pasta and are the perfect healthy comfort food.
The weather the last couple of days has been utterly foul. Non-stop rain all day and the darkest, gloomiest skies. Comfort food is definitely in order and these vegetarian mushroom meatballs are just the thing. Spaghetti with tomato sauce, meatballs and plenty of cheese has to be one of the ultimate comfort foods and it is really easy to make an amazing tasting vegetarian (or even vegan) version of the classic. These herby parmesan smashed potatoes are the ideal side dish – creamy inside, crispy outside and totally addictive! Post sponsored by Albert Bartlett.
These herby parmesan smashed potatoes are my new favourite side-dish. In fact, never mind side-dish, I would be very happy to just eat a plateful of them on their own, they are that good! (more…)
An easy, healthy midweek meal that is on the table in under half an hour. Post sponsored by Love Pork.
Do you struggle to cook healthy, tasty meals during the week? I definitely do. It is difficult to make a good meal when you are tired and pressed for time, so all too often I turn to the same old pasta and pesto as it is so quick and easy. With a little thought however, it is possible to come up with a tasty, nourishing and satisfying meal that is suitable for all the family and ready in under half an hour. (more…)

I have come down with a stinking cold. I don’t get ill very often, maybe about once every five years; so when I do catch a cold it really hits me hard. I have been struggling to do much at all but I have work and diy to be getting on with and Ringo to walk so I’ve spent a lot less time resting than I would like to. It has meant that I really haven’t felt like cooking but I still need tasty, nourishing food, fast! These prawns in an easy Thai coconut sauce are ready in about half an hour and are very low effort but big on flavour. (more…)
Does anyone else struggle to return to normal life after they have been away somewhere? After being at a festival at the weekend we then had to drive for four hours to pick Ringo up from my parents house, then another four hours home and it has all completely wiped me out. I feel like I need to sleep for a week but I have so much that I need to be getting on with that that really isn’t an option! (more…)
What are your go-to meals? The ones that you cook frequently, pretty much know the recipe for off by heart and that never disappoint. These sweetcorn and feta fritters are one of mine and I cook them, or a variation of them, probably once every few weeks. They are quick and easy to make, easily adaptable to fit whatever you happen to have in the fridge or freezer, and most importantly, delicious! (more…)
Our kitchen renovation is coming along well, if a little slowly. We now actually have a sink downstairs (having to go all the way up to the third floor to get water was getting rather tiring and it made it so much more difficult to make a cup of tea than it should be!), we have done most of the hard labour, and I had a shiny new range cooker installed yesterday. Pretty much all that is left to do is painting and tiling, as well as the monumental task of organising all of my baking supplies and photography props… (more…)
