I adore hummus, and always have done. One of my favourite lunches is a pot of hummus with some crusty bread and vegetable sticks for dipping, I will happily eat the entire tub in one sitting. While I do often buy hummus (I’m lazy), it is so quick and easy to make your own and that way you can control the flavours to get the balance of lemon, garlic and olive oil that suits you. (more…)

Beetroot is such a versatile vegetable and is also incredibly good for you, not to mention it’s beautiful, intense colour. Despite the fact that it is one of my favourite vegetables, I don’t think that I have a single recipe using it on the blog! (Until now). That’s a shame because there are so many brilliant ways to use it, from soup to chocolate cake; I will make sure that I remember to post more recipes using beetroot from now on. (more…)

I think that pizza might be my all-time favourite food (of the savoury variety at least). If I had to pick a final meal (lets hope it doesn’t come to that!), then it would almost certainly be pizza followed by ice cream. As much as I love a good takeaway pizza (who doesn’t?!), you can’t beat the home-made kind; I have several varieties of pizza that I make regularly, but this mushroom pesto pizza gets made the most frequently. Quesadillas have to be one of the meals that I make most often, as regularly as once a week because they are not only soooo tasty (anything with cheese is good in my book), but they are also pretty quick and simple to make and are infinitely adaptable. I’m definitely not, I had quite a lot of late nights, three Christmas dinners (not all in one day), lots of traveling and a fair bit of drinking and I’m feeling rather worn out! As I stated in my last post, I’m not quite done with pumpkin yet. Today I’ve got this colourful double pumpkin goats cheese pizza for you; what makes it double pumpkin you ask? Well, not only did I top the pizza with chunks of roasted pumpkin, but much like the chocolate ginger pumpkin bread wreath that I posted last week, I made the pizza dough using pumpkin puree. This not only gives it a lovely orange colour, but is also a great way to pack in a bit of extra veg. (more…)

The weather suddenly got properly chilly and Autumnal, so much so that we have (reluctantly) had to switch on the heating. It is definitely the time of year for hot drinks, cosy jumpers and hearty soups. Although I do make soup year round, it becomes much more of a staple in the colder months, and I make at least one batch a week; it is so easy to make, healthy, filling and is just the thing to warm you up after a wet, chilly dog walk.
