There are definite signs of spring in the air and I’ve spotted plenty of flowers starting to bloom while out on my daily dog walks; but the weather is still decidedly wet and chilly and I am not quite out of the craving comfort foods stage yet. Quesadillas have to be one of the meals that I make most often, as regularly as once a week because they are not only soooo tasty (anything with cheese is good in my book), but they are also pretty quick and simple to make and are infinitely adaptable. I suppose I should start off by saying happy New Year! I hope you all had lovely Christmases and are thoroughly rested. I’m definitely not, I had quite a lot of late nights, three Christmas dinners (not all in one day), lots of traveling and a fair bit of drinking and I’m feeling rather worn out! As I stated in my last post, I’m not quite done with pumpkin yet. Today I’ve got this colourful double pumpkin goats cheese pizza for you; what makes it double pumpkin you ask? Well, not only did I top the pizza with chunks of roasted pumpkin, but much like the chocolate ginger pumpkin bread wreath that I posted last week, I made the pizza dough using pumpkin puree. This not only gives it a lovely orange colour, but is also a great way to pack in a bit of extra veg. (more…)

The weather suddenly got properly chilly and Autumnal, so much so that we have (reluctantly) had to switch on the heating. It is definitely the time of year for hot drinks, cosy jumpers and hearty soups. Although I do make soup year round, it becomes much more of a staple in the colder months, and I make at least one batch a week; it is so easy to make, healthy, filling and is just the thing to warm you up after a wet, chilly dog walk. One of the ingredients that I always make sure my freezer is stocked with is frozen spinach; I even prefer it to fresh spinach as the fresh stuff cooks down so much that you have to buy a vast quantity of it to end up with barely any once cooked. I use it for a variety of things, my favourites being spinach pesto and various variations of spanakopita – Greek spinach cheese pie. Spanakopita is traditionally made with homemade filo (phyllo) pastry, though shop bought can absolutely be used as well; but I was in the mood for something different so tweaked my usual recipe to turn it into a quiche instead. Heinz have recently launched their new [Seriously] Good Mayonnaise which is free from added colours, flavourings and artificial thickeners as well as being made with free range eggs, and is available in standard and light varieties. To celebrate the launch Heinz have created the [Seriously] Good Taste Challenge competition; the challenge is to create a dish that is served on a single spoon. The dish can be savoury or sweet, the only rules are that it must use Heinz [Seriously] Good Mayonnaise as an ingredient and be served as a single spoon serving – a ‘tasty mouthful’ as they put it. So apparently this week is #NationalBBQWeek, but as I write this it is dark, wet and miserable outside, most decidedly NOT barbecue weather…hopefully it will pick up for the weekend in time to get the BBQ out (not that I actually even own one…). But even if the weather doesn’t improve, you can still enjoy some BBQ food with these sausages with beer pretzel buns, beer braised onions and roasted garlic butter; as the sausages can just be cooked in a pan or oven. Continuing the theme of hearty, warming recipes, today I’ve got one of my favourite soup recipes for you – spiced yellow split pea and sweetcorn soup; it is really healthy, full of protein and vegetables, incredibly delicious, and because of the split peas it is also very filling. I make it regularly over the colder months when I am in need of a nutritious yet comforting and filling meal, and it’s bright, sunny yellow colour is sure to brighten up a gloomy day. (more…)
