As much as I enjoy making towering, intricately decorated layer cakes, the cakes that I most enjoy eating, and crave most often, are generally a far simpler affair. The kind of cakes that aren’t too pretty to look at, but you feel much less guilty about eating a massive wodge of for a mid-morning snack. I had been craving apple cake for a couple of weeks and when the tree in the garden yielded a few ready-to-pick apples that weren’t great for eating fresh, but were good for cooking with, I finally got round to satisfying the craving with this simple wholemeal apple cake. Sweet breads are my weakness, when I bake a cake I can eat a slice and not go back for seconds, but with sweet, filled breads I just can’t stop myself from going back and slicing off another piece, and another, until I’ve eaten the whole lot…. this chocolate chestnut bread wreath is no exception….I ate nearly half the loaf in a day…Maybe it’s because the idea of bread is wholesome, so even though it’s got butter, sugar and chocolate in it, it doesn’t feel that indulgent… (more…)

Following the success of my cranberry pumpkin bread the other day (it was sooo good!), I had some leftover pumpkin puree sitting in the fridge. For a while I was at a loss as what to make with it, there are just too many tempting options – pumpkin cookies, pumpkin pancakes, pumpkin pie, pumpkin ice cream, pumpkin cake, pumpkin muffins…are just some of the things that crossed my mind (while I salivated), but then I thought of something that I hadn’t baked in far too long – cinnamon rolls! I’ve been a bit late to the pumpkin party this year, although I cook with butternut squash a lot (it’s my favourite vegetable), I don’t often bake with it, but I decided to remedy that this week with a loaf of pumpkin bread (I say bread but I would call this a loaf cake…) and now I’m kicking myself for not getting in the game sooner because this cake is delicious…Seriously, seriously good! Nutmeg Ice Cream

It’s never the wrong time of year for ice cream. I enjoy making it all year round but I vary the flavours depending on the season, spring and summer are all about fresh fruits and refreshing flavours whereas in autumn and winter I mostly make ice creams spiked with spices and booze.  This nutmeg ice cream is perfect for autumn and winter; nutmeg to me is the quintessential flavour of the season and this delicious ice cream makes a great replacement for vanilla to serve with fruit pies, crumbles, tarts and cobblers. This recipe took a couple of go’s to get right, the first time I made them, the tarts were delicious but the frangipane sort of exploded and spread everywhere, they tasted good but looked a mess. I was determined to get them right and not be defeated by a tart; so I tried again with a few tweaks and they turned out beautifully! (more…)

I lost all form of self-restraint when I baked this ( not that I had much to start with). I was incapable of going into the kitchen without gobbling down a slice it was so incredibly moreish. I got through nearly half of the loaf by myself in a day, and it is not a small loaf… I justified this gluttony by telling myself that the apples counteract the butter…right?! (more…)

Blackberry recipe number two! I had been planning on making a batch of plum crumble ice cream whilst they were in season, but seeing as I ended up picking so many blackberries I decided to do a blackberry crumble one instead. The ice cream is an attractive pale violet colour and has a delicate blackberry flavour which melds beautifully with the chunks of crunchy crumble. If you wanted to really amp up the purple colour you could always add a couple of drops of food colouring. (more…)
