The weather has been so hot recently that every time I buy bananas they ripen so incredibly quickly that we are unable to eat them all before they get too ripe. For me, once they have got black spots they are just too ripe to eat as they are. They are excellent for baking with however; and an excess of blackened bananas is the perfect excuse to make this vegan banana cake with chocolate peanut butter frosting. (more…)
Vegan chocolate chip banana bread – a vegan version of everyone’s favourite bake. Easy to make using storecupboard ingredients, packed with chocolate chips and topped with a blueberry glaze; this banana bread is seriously good!
Banana bread has to be my all-time favourite bake. My mum used to make it regularly when I was growing up and now I make it whenever there are blackened bananas in the fruit bowl (either that or they go into a smoothie). I have been trying to eat plant based most of the time recently so I wanted to make a vegan version of banana bread. Can you believe that up until now I have never owned a bundt tin? I have always coveted one, but they are quite expensive (I want a Nordicware one…) so I have never been able to justify buying one. So I was rather pleased when a box full of baking goodies that I was sent to review happened to contain a bundt tin; it is not a Nordicware one, but a silicone, half size (6cup) tin. The size is actually perfect for me, as as beautiful as full size bundts are, they are rather large and make a bit too much cake for a family of two… (more…)
