Nutty bourbon brownies – gooey, fudgy brownies with a boozy kick and plenty of crunchy nuts.
It has been a long time since I shared a brownie recipe on here; I am making up for that though with these nutty bourbon brownies as they are very, very good! I honestly thought that these brownies were going to be rubbish; this was my first time baking with coconut flour and I just made the recipe up as I went along. They didn’t look like anything much when I pulled them out of the oven and they don’t have that much coveted shiny, flaky brownie crust; but when I bit into one I was totally converted, they are extremely good. So rich, fudgy and chocolatey that they are practically indistinguishable from the best regular flour/refined sugar/butter laden brownies. And yet they are free from gluten, grains, refined sugar AND dairy and are made using several highly nutritious ingredients so you can enjoy a slice without feeling too guilty. (more…)
Valentines day is fast approaching and while I have no plans to celebrate it personally (I’m not single, we just don’t really do Valentines), I will happily take any excuse to do a spot of baking, especially when said baking involves copious amounts of chocolate… So I made brownies, because a warm, gooey brownie topped with a generous dollop of ice cream would be my Valentines day dessert of choice. These brownies are elevated beyond regular brownie territory by the addition of strawberries and cream flavoured Lindor truffles, which meld with the dense, fudgy brownie, creating pockets of strawberry and cream flavour. Do you ever get a niggling idea in your head that just won’t go away? The seedling of a fully formed plan that intrudes on your thoughts and gets stuck in your mind, germinating, until it is eventually transformed into a brilliant, fully-fledged idea…. It started with mousse. All I knew at that point is that I wanted to make some mousse of some sort. I sat on that idea for a couple of weeks, in the meantime planning Valentines day baking, which got me thinking about red velvet…which got me thinking about cream cheese, because what is a red velvet cake without the iconic cream cheese icing?! (It’s the best bit!) My mind put the cream cheese and the mousse together… then spread it on top of some red velvet brownies… and added ganache, and then threw in some oreos for good measure… And red velvet brownies with oreo cream cheese mousse and chocolate ganache were born!
