Our kitchen renovation is coming along well, if a little slowly. We now actually have a sink downstairs (having to go all the way up to the third floor to get water was getting rather tiring and it made it so much more difficult to make a cup of tea than it should be!), we have done most of the hard labour, and I had a shiny new range cooker installed yesterday. Pretty much all that is left to do is painting and tiling, as well as the monumental task of organising all of my baking supplies and photography props… (more…)

Although I do really like making my own pizza from scratch, including the dough; it can be a bit of a faff and takes a while. Not good if you are hungry and craving pizza fast! I am not a fan of shop bought pizza bases, but one really good ready-made solution is naan bread; it makes the perfect pizza base and because it is pre-baked you simply need to melt your cheese to finish off your pizza. I think that pizza might be my all-time favourite food (of the savoury variety at least). If I had to pick a final meal (lets hope it doesn’t come to that!), then it would almost certainly be pizza followed by ice cream. As much as I love a good takeaway pizza (who doesn’t?!), you can’t beat the home-made kind; I have several varieties of pizza that I make regularly, but this mushroom pesto pizza gets made the most frequently. Loaded veggie quesadillas – healthy, filling quesadillas stuffed with spiced roasted sweet potatoes, peppers, black beans, avocado, cream cheese & cheddar.
Quesadillas have to be one of the meals that I make most often, as regularly as once a week because they are not only soooo tasty (anything with cheese is good in my book), but they are also pretty quick and simple to make and are infinitely adaptable. These particular ones are loaded with veggies and black beans so actually make for a pretty healthy and filling meal. (more…)
One of the ingredients that I always make sure my freezer is stocked with is frozen spinach; I even prefer it to fresh spinach as the fresh stuff cooks down so much that you have to buy a vast quantity of it to end up with barely any once cooked. I use it for a variety of things, my favourites being spinach pesto and various variations of spanakopita – Greek spinach cheese pie. Spanakopita is traditionally made with homemade filo (phyllo) pastry, though shop bought can absolutely be used as well; but I was in the mood for something different so tweaked my usual recipe to turn it into a quiche instead. Continuing the theme of hearty, warming recipes, today I’ve got one of my favourite soup recipes for you – spiced yellow split pea and sweetcorn soup; it is really healthy, full of protein and vegetables, incredibly delicious, and because of the split peas it is also very filling. I make it regularly over the colder months when I am in need of a nutritious yet comforting and filling meal, and it’s bright, sunny yellow colour is sure to brighten up a gloomy day. (more…)
Barring some extremely boring vegetable broths I made when I tried following the 5:2 diet for a while (I lasted 5 weeks and only lost 2lb… and fast days were a nightmare, I have been banned from trying it again, apparently I am not very nice to be around when I’m starving, shocker.), this quinoa, lentil, kale and feta salad has to be the healthiest meal I have ever cooked. But unlike the vegetable broth it is actually, genuinely delicious! This is definitely due in part to the fact that it contains cheese, everything is better with cheese; but it is also loaded with green vegetables and provides lots of protein in the form of lentils and quinoa (and salmon), all of which also happen to be very tasty. Seasoned with lemon juice, garlic and extra virgin olive oil, paired with the feta and the fact that I cooked the quinoa in vegetable stock, it is an extremely flavourful and more-ish salad that is also very very good for you; and because it is high in protein it is also actually filling! Something that I struggle with when it comes to lots of healthy meals is actually feeling full and satisfied afterwards (I’m looking at you courgetti), no problems with this meal though, and I enjoy eating it!
