I think that pizza might be my all-time favourite food (of the savoury variety at least). If I had to pick a final meal (lets hope it doesn’t come to that!), then it would almost certainly be pizza followed by ice cream. As much as I love a good takeaway pizza (who doesn’t?!), you can’t beat the home-made kind; I have several varieties of pizza that I make regularly, but this mushroom pesto pizza gets made the most frequently. Loaded veggie quesadillas - delicious, filling, healthy quesadillas stuffed with spiced roasted sweet potato, peppers, black beans, avocado, cream cheese and cheddar.

Quesadillas have to be one of the meals that I make most often, as regularly as once a week because they are not only soooo tasty (anything with cheese is good in my book), but they are also pretty quick and simple to make and are infinitely adaptable. These particular ones are loaded with veggies and black beans so actually make for a pretty healthy and filling meal. (more…)

One of the ingredients that I always make sure my freezer is stocked with is frozen spinach; I even prefer it to fresh spinach as the fresh stuff cooks down so much that you have to buy a vast quantity of it to end up with barely any once cooked. I use it for a variety of things, my favourites being spinach pesto and various variations of spanakopita – Greek spinach cheese pie. Spanakopita is traditionally made with homemade filo (phyllo) pastry, though shop bought can absolutely be used as well; but I was in the mood for something different so tweaked my usual recipe to turn it into a quiche instead. Quinoa, Lentil, Kale And Feta Salad With Salmon

Quinoa, lentil, kale and feta salad with salmon, incredibly heallthy and delicious!

Barring some extremely boring vegetable broths I made when I tried following the 5:2 diet for a while (I lasted 5 weeks and only lost 2lb… and fast days were a nightmare, I have been banned from trying it again, apparently I am not very nice to be around when I’m starving, shocker.), this quinoa, lentil, kale and feta salad has to be the healthiest meal I have ever cooked. But unlike the vegetable broth it is actually, genuinely delicious! This is definitely due in part to the fact that it contains cheese, everything is better with cheese; but it is also loaded with green vegetables and provides lots of protein in the form of lentils and quinoa (and salmon), all of which also happen to be very tasty. Seasoned with lemon juice, garlic and extra virgin olive oil, paired with the feta and the fact that I cooked the quinoa in vegetable stock, it is an extremely flavourful and more-ish salad that is also very very good for you; and because it is high in protein it is also actually filling! Something that I struggle with when it comes to lots of healthy meals is actually feeling full and satisfied afterwards (I’m looking at you courgetti), no problems with this meal though, and I enjoy eating it! I’ve been trying to lay off the baking a bit for a while after overdosing on sweets over Christmas… On Christmas Eve I spent the entire day in the kitchen preparing four desserts, two for Christmas day and two for Boxing day! So I’ve got another savoury recipe for you today, harissa marinated halloumi, roasted vegetable and houmous flatbread wraps with spiced sweet potato wedges. It is a relatively healthy meal, with plenty of veg and tonnes of flavour and is very easy to throw together. (more…)

Vegetarian Nut Roast Pie

Impressive nut roast pie with vegetarian hot water crust pastry, the perfect vegetarian Christmas option - Domestic Gothess Like fruitcake, nut roast is another very divisive and much-maligned food; oft-mocked and shunned by vegetarians in favour of something a little less clichè, it is rare nowadays to find it on a menu anywhere. Which is a shame as it is both incredibly nutritious and, if done well, extremely delicious. I make nut roast fairly regularly, both I and my fiance love it, and it works perfectly with all of the usual roast dinner trimmings; any leftovers also make great sandwiches with some cheese and chutney. It is also perfect for Christmas dinner as a vegetarian option (though it does also go down well with the meat eaters) as it can be served with all the same sides as the main roast. A regular nut roast is a little plain-looking though, too boring for a proper festive dinner; this pie however makes for a very impressive centerpiece, making sure that any vegetarians don’t feel left out and under-catered for. Yafawi Sfeeha – Palestinian Cheese Buns

The July Daring Bakers’ Challenge was brought to us by Manal from Manal’s Bites. She introduced us to an authentic Palestinian dish from Jaffa that is served as a main meal along with a bowl of soup or a salad. The “Yafawi Sfeeha” or also known as “Milwayeh” which means twisted, is crispy yet tender and full of flavor.
