Pecan pie cheesecake – two amazing desserts rolled into one to give the best of both worlds!
It is currently freezing cold and snowy here so all I can think about eating is hearty comfort foods and puddings. I actually made this pecan pie cheesecake before Christmas and didn’t get round to sharing the recipe, but I thought that this cold snap was the perfect excuse to finally get round to posting it. I’ve always felt like New Years Eve falls too soon after Christmas; by that point I’ve had enough of celebrating and socialising and just want to hibernate for about a month with a duvet, stack of films and a supply of Christmas chocolates… And I certainly don’t want to go out to a packed bar or club with an hour long wait to get drinks; parties at home with friends are definitely my preferred form of celebrating. So I shall be doing just that for this New Years, though not at my own home, which is probably best as I wouldn’t want to have to clean up the next day! (more…)
I have only recently discovered the joys of a slow cooker – the ability to just throw everything into a pot, abandon it and come back hours later to a delicious meal. Slow cookers aren’t just good for meat and stews though, you can cook a lot of things in there that you maybe wouldn’t think to; things like brownies, macaroni cheese, porridge, steamed puddings and cheesecake…. Do you ever get a niggling idea in your head that just won’t go away? The seedling of a fully formed plan that intrudes on your thoughts and gets stuck in your mind, germinating, until it is eventually transformed into a brilliant, fully-fledged idea…. It started with mousse. All I knew at that point is that I wanted to make some mousse of some sort. I sat on that idea for a couple of weeks, in the meantime planning Valentines day baking, which got me thinking about red velvet…which got me thinking about cream cheese, because what is a red velvet cake without the iconic cream cheese icing?! (It’s the best bit!) My mind put the cream cheese and the mousse together… then spread it on top of some red velvet brownies… and added ganache, and then threw in some oreos for good measure… And red velvet brownies with oreo cream cheese mousse and chocolate ganache were born!
