It feels like the run up to Christmas is already in full swing and I am lagging behind a bit; I have done no Christmas shopping, haven’t planned any recipes, completely missed stir up Sunday and don’t even know where I am spending Christmas day yet…. I think I need to work on being more organised but the miserable weather and the fact that it gets dark so early now really aren’t helping with my motivation levels. The dark gloomy days are perfect for staying home and baking however (though not great for photographing the results), and making these mini cardamom apples pies did go some way towards increasing my Christmas spirit. Can you believe that up until now I have never owned a bundt tin? I have always coveted one, but they are quite expensive (I want a Nordicware one…) so I have never been able to justify buying one. So I was rather pleased when a box full of baking goodies that I was sent to review happened to contain a bundt tin; it is not a Nordicware one, but a silicone, half size (6cup) tin. The size is actually perfect for me, as as beautiful as full size bundts are, they are rather large and make a bit too much cake for a family of two… (more…)

A marvelous thing happened the other day – I was able to go outside without a coat! Since then there have been a few days where it has been warm enough to venture out without one (though certainly not every day!), the sun has been making a regular, much welcomed appearance, and last night it was still just about light at 8pm. All of this has left me in quite a cheery mood and very much ready for summer, and what better way to celebrate the changing of the seasons than with a suitably cheerful cake? This berry cider cake is exactly that; although it may be a little early for berries I just couldn’t resist buying some, more for their beautiful, bright colour than anything else! (more…)

Toffee apple gingerbread loaf cake, perfect for bonfire night - Domestic Gothess I don’t think that I have ever been to a bonfire night celebration as an adult, though the holiday is tinged with nostalgia; as a child I remember being bundled up warm and heading out as a family to watch the local firework display and burning of the guy; or building a bonfire in the back garden (check for hedgehogs!) and fashioning a guy from old clothes and newspaper and then gleefully setting fire to it… There are certain foods that are always reminiscent of Guy Fawkes night as well; crisp, cheesy jacket potatoes, mulled apple juice (though I prefer the grown-up kind now!), squidgy gingerbread, toffee apples, and marshmallows toasted on the bonfire; I used to let mine catch fire so that they were burnt on the outside and liquid on the inside… (more…)

Banana Pancakes With Honey Butter

Banana pancakes with whipped honey butter, quick, easy and healthy(ish), perfect for breakfast or brunch - Domestic Gothess I often buy bananas with the intention of letting them go brown and overripe as I love to bake with them; they are horrible to eat as they are, but mash them up and mix them into cake, or milkshake, or pancakes and they become something truly delicious. The smell of banana bread baking is utterly irresistible; when I don’t want to wait for banana bread to bake though, banana pancakes are the next best thing. They are super quick and easy to make, taste amazing and are much healthier than cake! (more…)

Vanilla Almond Milk Porridge With Honey Roasted Pear

Vanilla amond milk porridge with honey roast pear, cinnamon and hazelnuts. Dairy free and easily adaptable to be vegan. I had never tried almond milk up until a couple of days ago when I saw that it was on offer and bought some on a whim. I didn’t think that I would really like it but was interested to try…and now I’m hooked! It’s surprisingly delicious, though not for everyone; Damian tried it and proclaimed it to be “really weird, and the taste didn’t fit the texture”, whatever that means…he’s odd. I don’t think I would ever want it in my tea, but I would now rather drink a glass of almond milk as opposed to regular milk, and almond milk hot chocolate is something of a revelation. (more…)
