Clementine marmalade - a delicious homemade marmalade using clementines, great for Christmas gifts!

Clementines are really cheap in the shops at the moment so I ended up buying two and a half kilograms of them; I’ve been eating several of them a day but wanted to make something to use a few of them up. I really enjoy preserving, particularly when it is cold and dark outside; there is something comforting about the process and winter just makes me want to hole up at home and stockpile homemade foods so I chose to make marmalade with them. The wonderful smell of it simmering away on the stove will also make your house smell like an orange grove, which is enough to brighten up even the most miserable and wet of days. (more…)

Tangy Lemon & Lime Curd

I don’t make fruit curd very often, for the simple reason that I cannot resist eating the lot. No word of a lie, I ate this entire batch of lemon & lime curd by myself in under a week… It is dangerously addictive stuff! It also happens to be very simple to make and amazingly versatile, not to mention so much nicer than shop-bought. It is fantastic just piled generously on toast, but also works well as a cake, tart, doughnut or eclair filling, swirled through ice cream, yoghurt or cheesecake, on pancakes, waffles or scones and can even be used in steamed puddings and souffles; the list goes on. Lemon & cardamom sour cream pound cake - Domestic GothessSomehow I have been doing this blogging thing for a year now….that’s right, it was a year ago that I clicked publish on my first (atrocious) post (and no I’m not going to link to it, if you want to see that atrocity you have to find it yourself!), though it really doesn’t feel like it has been that long. Back then I didn’t have a clue what I was doing – how to write a blog post, take decent photos, promote it, use social media effectively (still a bit clueless on that one…) or much of anything really. I have learned a vast amount since then, though there is still a long way to go… I have also baked (and eaten) a huge amount, and have hit publish on a total of 91 posts, including this one. I have gotten to know some lovely fellow bloggers, who have been nothing but helpful and supportive, worked with some great brands, and most importantly, have enjoyed (almost) every bit of it – bring on another year! I want to take a moment to thank every one of you who takes the time to read my posts, comment on them, follow me on (deep breath..) Lime Ice Cream

lime ice creamI had a load of limes left over from making mini lime yoghurt loaf cakes – I had needed lots of the zest but not the juice; so seeing as the weather has been quite warm and sunny recently I decided to put them to good use in some ice cream. I’ve also been given a new (secondhand, slightly battered…) ice cream maker – one of the ones where you don’t need to pre-freeze the bowl, so now I can have ice cream on a whim, without having to remember to put the bowl in the freezer the day beforehand! mini lime yoghurt loaf cakesI find something very appealing about small, individually portioned baked goods; they are more delicate and dainty than full sized versions, and easier to serve. Not that I take the individually portioned bit seriously…if anything,their small size makes it easier to scoff down more than I would if I were eating a slice from a single, large cake… Especially when they are as light, moist, and fresh tasting as these little loaves are. A frequent response I get from Damian when I ask him if there is anything he would like me to bake is “something crispy”. That’s it, no more detail, he’s awkward like that…and a bit texture obsessed. He loves crispy textured things and hates things with the texture of cheesecake…which is rather annoying and why I never really make cheesecake as I’d end up eating the entire thing by myself…and as amazing as that sounds it’s probably not the best idea…(Pretty much the only time I make cheesecakes is when visiting my sister…she’s very much pro cheesecake). Christmas has snuck up on me way too fast this year, I’m usually super organised and have all my gift shopping done by the first week of December but I think that this year a lot of people are going to be getting their presents a tad late…I have however managed to get in a decent amount of Christmas baking, my favourite of which (so far) has been these cupcakes. I’d had the idea in my head for a while that I wanted to make a mulled wine cake, so when I stumbled across a recipe for red wine chocolate cake I knew that I just had to adapt it to come up with a christmassy version. Mini Panettone With Cranberry And Ginger

I spent the day yesterday moving domesticgothess.com from wordpress.com to self hosted wordpress.org. I say I moved it…but really I spent the day watching over his shoulder as my fiance did it for me and asking stupid questions…It took a while, there were a few confusing moments and the site had a bit of downtime but we (he) got there eventually. I wanted to move to self hosted so I could use plugins and customise the site a little more so I will be having a play around and making a few changes over the coming weeks. (more…)
