One of my fondest memories from my childhood is the family picnics we used to have throughout the Summer. My parents would pack us three children, two dogs and a veritable feast into the car and we would head off to a spot by the river where we could play in the water and the accompanying fields before stuffing our faces. I made these little lemon, olive oil & semolina cakes for a picnic last week; they are great for picnics as they are very quick to whip up, and because they aren’t iced they can be transported in their tins or a tub easily if need be. The combination of lemon zest and semolina flour give the cakes a lovely sunny yellow colour, and the drenching of syrup provides a strong kick of lemon flavour and keeps them deliciously moist and soft. Did you know it was national cupcake week this week? I had no idea it even existed until OXO and The Happy Egg Co. contacted me and asked if I could create a cupcake recipe for the occasion and sent me a couple of their baking tools to help make them. It seems like there is a national week or day for pretty much every foodstuff nowadays…it all seems a little over the top and unnecessary to me to be perfectly honest but hey, it’s a good excuse to bake some cupcakes! Mini chocolate raspberry cakes for two – two tiny chocolate cakes baked in tin cans with raspberry buttercream. Perfect for Valentine’s Day or just any time you want cake! Vegan option.
It can be difficult baking cakes when there are just two of you to eat it…you either end up eating way more cake than is healthy, or it ends up in the freezer. I try to bake larger cakes and batches of cupcakes only when there is a party to take them to, or when we have people visiting. But sometimes there is no occasion to bake for and you just really want cake…. And that’s where these mini chocolate raspberry cakes are perfect. The recipe makes exactly two portions of cake, and you don’t even need to buy any special cake tins as they are baked in regular (clean, empty) food tins, the kind that tinned tomatoes, baked beans, soup etc come in. (I used 400g ones – the most common tin size)
I was told when going to visit a friend that I “must bring cake”, so of course I jumped at the opportunity to do some baking! He LOVES chocolate so I made one of the most chocolaty things I could think of – quadruple chocolate cupcakes… Soft, dark chocolate cake surrounds a centre of gooey dark chocolate ganache and the cupcake is topped with swirled milk and white chocolate swiss meringue buttercream. I am always on the lookout for recipes that use up egg whites as I hate to waste them and after making blackberry ice cream the other day I had four whites leftover that needed to be used. These cherry cakes were perfect. They are made using a slightly odd method, meringue is stirred into batter that is made with the addition of natural yoghurt, but it results in a very light, delicate, moist cake and also helps prevent the fruit from sinking.
