Steamed pudding has a bit of a poor reputation I feel; bad memories of stodgy school desserts or the ones that come in a can perhaps? I have been eating so many berries recently, I’ve always got a stash of them both in the fridge and in the freezer, I can’t get enough! I want to make the most of them while they are still in season as soon enough they will be gone for the Winter. Although most of them just get eaten straight from the tub, I have managed to set a few aside for baking with; these coconut and berry fruit tarts are a wonderful way to serve them and would be perfect for afternoon tea or a garden party, or just because it’s Tuesday. I unsurprisingly own quite a lot of kitchen equipment (and yet still covet more!); a lot of it gets used regularly; some things, such as the ice cream maker and deep fryer, get brought out every now and again; and some things shamefully get used once then shoved in a drawer never to see the light of day again. My poor waffle maker was one of those things that got used once then put away. It makes no sense to have neglected it so, seeing as how both I and Damian love waffles; I suppose I merely forgot about it’s existence. I came across it whilst attempting to clear out a cupboard and vowed to put it to more frequent use; these chocolate chip almond waffles were a perfect reminder of just how good waffles can be. After a period of nothing but cold, rainy days we have at last seen some sunshine in the UK! Finally an excuse to break out the ice cream maker (not that I need an excuse). This roasted rhubarb and strawberry crumble ice cream is an ideal ice cream for spring; full of seasonal fruit with a sweet, fresh, slightly tangy flavour and plenty of chunks of crisp, buttery crumble. I did a very grown up thing last week – I bought a house with my fiance! Granted, it’s a badly designed, hideously decorated, 1960’s build, terraced ex-council house but hey, it’s ours and it’s a start. We also already live in it so there’s no need to move house, and now that we own it we can do something about the hideous decor (a visual onslaught of colours, patterns and textures, including the most intricately patterned artex ceiling I have ever seen (painted peach….the horror!)). Doing it up is going to be a very slow and frustrating process involving a huge amount of wallpaper stripping; it also needs a new kitchen and bathroom, but I think we may have to save up a bit before we can afford such drastic improvements so sadly I’ll have to put up with my awful oven for a while longer (sob).
