I have been eating so many berries recently, I’ve always got a stash of them both in the fridge and in the freezer, I can’t get enough! I want to make the most of them while they are still in season as soon enough they will be gone for the Winter. Although most of them just get eaten straight from the tub, I have managed to set a few aside for baking with; these coconut and berry fruit tarts are a wonderful way to serve them and would be perfect for afternoon tea or a garden party, or just because it’s Tuesday. I unsurprisingly own quite a lot of kitchen equipment (and yet still covet more!); a lot of it gets used regularly; some things, such as the ice cream maker and deep fryer, get brought out every now and again; and some things shamefully get used once then shoved in a drawer never to see the light of day again. My poor waffle maker was one of those things that got used once then put away. It makes no sense to have neglected it so, seeing as how both I and Damian love waffles; I suppose I merely forgot about it’s existence. I came across it whilst attempting to clear out a cupboard and vowed to put it to more frequent use; these chocolate chip almond waffles were a perfect reminder of just how good waffles can be. After a period of nothing but cold, rainy days we have at last seen some sunshine in the UK! Finally an excuse to break out the ice cream maker (not that I need an excuse). This roasted rhubarb and strawberry crumble ice cream is an ideal ice cream for spring; full of seasonal fruit with a sweet, fresh, slightly tangy flavour and plenty of chunks of crisp, buttery crumble. I did a very grown up thing last week – I bought a house with my fiance! Granted, it’s a badly designed, hideously decorated, 1960’s build, terraced ex-council house but hey, it’s ours and it’s a start. We also already live in it so there’s no need to move house, and now that we own it we can do something about the hideous decor (a visual onslaught of colours, patterns and textures, including the most intricately patterned artex ceiling I have ever seen (painted peach….the horror!)). Doing it up is going to be a very slow and frustrating process involving a huge amount of wallpaper stripping; it also needs a new kitchen and bathroom, but I think we may have to save up a bit before we can afford such drastic improvements so sadly I’ll have to put up with my awful oven for a while longer (sob). Chocolate Porter (Or Stout) Ice Cream & A Giveaway

It was only a few years ago, while managing a country pub, that I started to like beer; before then I had found the taste too bitter. But maybe something to do with the fact that I was serving many pints of it a day and taking care of the casks in the cellar changed my mind, and I grew to appreciate the bitterness. I have not however managed to grow to like drinking stout or porter, it is just too strong for me; but, pair it with chocolate and add to to ice cream (or cake) then it is a whole different story. Used in this way the deep, rich flavour complements and accentuates the chocolate and adds a malty flavour without overpowering. It is in short, utterly delicious.

It feels like an age since I last posted, and I was planning on putting this post up last week but life (and my seven month old niece who I was babysitting for the week – how does anyone get anything done while looking after a baby?!) got in the way so it’s taken me an awfully long time to get this done! I’m also going to Bloodstock festival (heavy metal) tomorrow so will be away until next week; I’m hoping for a warm, sunny weekend but doubt I’m going to get it so I’ve got my (black, naturally) wellies packed just in case; I say packed, but currently I just have piles of stuff to take dotted around the house and haven’t actually packed anything yet…I am not very prepared! Something amazing has happened this past week – Britain has actually had some Summer! As in actual hot, sunny days and clear blue skies rather than torrential rain and gloom… This has meant that I’ve been having to get up early to walk Ringo before it gets too hot to move and the pavement burns his little paws, and all I’ve wanted to eat is ice cream and watermelon, but I’m certainly not going to complain about some much needed sunshine! The heat has also been a good excuse (not that I’ve ever needed one) to put my ice cream maker to good use and this white chocolate allspice ice cream is one of my recent creations. (more…)

This is for two main reasons, those being cheese, and ice cream; which are probably my favourite food groups (don’t try telling me that vegan “cheese” is any kind of substitute for the real stuff). That being said, I do occasionally make a vegan recipe, more out of necessity than on purpose – because I’ve run out of eggs for example. In the case of this vegan roasted banana ice cream, I had some bananas that needed to be used up and fancied making ice cream with them but didn’t have any cream in the house; I did however have a tin of coconut milk; so there you go, accidental vegan ice cream. Did you know that the Queen has not one but two birthdays? Obviously there is her actual birthday, on April 21st; but since 1748 the sovereign of the UK has had an ‘official’ birthday which is generally set around the start of June, to coincide with a higher probability of good weather for outdoor ceremonies. For her 90th birthday this year, June 11th is the official date, but celebrations will begin on June 10th as well as there being events on May 12-15th. (more…)

We have had some truly glorious weather recently (interspersed between some very wet and miserable days…); as I write this I am overlooking our back garden, which is beautifully warm and sunny, aaand horrifically overgrown…all the plants have had a sudden growth spurt and it is getting towards the point where even the dog can’t venture out any further than the patio due to the height of the weeds (he is only small). It needs some serious work doing to it; not just weeding, but leveling, digging out a couple of trees, extending the patio, laying a path, building vegetable beds, mending the fences etc. etc. I thought about starting work on it the other day, but I just couldn’t face it so baked this tropical fruit coconut tart instead which was a much more satisfying use of my time.
