Everyone needs a go-to chocolate cake recipe, one that is guaranteed to work every time and is perfect for any celebration, this one is mine. Three layers of rich, moist, intensely chocolaty cake smothered with smooth chocolate ganache. Obviously what constitutes the ‘ultimate’ chocolate cake is fairly subjective and not everyone will agree; but I think that this one is pretty perfect.
I made these super cute chocolate glazed black cat doughnuts to take to a Halloween party on Saturday, but really their appeal is not just limited to Halloween; omit the black food colouring and you have a brown cat doughnut; omit the cat design altogether and you are left with a delicious, soft, chocolate glazed ring doughnut. I’ve always felt like New Years Eve falls too soon after Christmas; by that point I’ve had enough of celebrating and socialising and just want to hibernate for about a month with a duvet, stack of films and a supply of Christmas chocolates… And I certainly don’t want to go out to a packed bar or club with an hour long wait to get drinks; parties at home with friends are definitely my preferred form of celebrating. So I shall be doing just that for this New Years, though not at my own home, which is probably best as I wouldn’t want to have to clean up the next day! (more…)
Lately I have been feeling like time has been rushing past me at an unbelievable rate, I’ve been struggling to find enough time to get everything done and I have to admit that I have let things like cleaning the house slide a little as I struggle to fit everything in… I’m not even particularly busy, there are just so many little tasks that all add up into an overwhelming mass and I have been tired and inefficient. I always make sure I find some time to fit in a bit of baking though! (more…)
It was my fiance’s birthday last week so obviously there had to be cake, we didn’t really do anything to celebrate though so there were just the two of us to eat said cake, and as much as I like making big, fancy cakes it is not a great idea to have a massive cake when there are only two of you to eat it… So I set out to make a more manageable sized one…I came up with this mini chocolate layer cake with nutella ganache, hazelnut praline and decorative hazelnut spikes; impressive, but tiny. I think this may be one of the prettiest cakes i have ever made…it is certainly a good deal more attractive than my last post! It is the perfect cake for spring, delicately flavoured with fragrant elderflower and sweet strawberries. I love elderflower, I remember when I was little helping my parents pick elderflowers to make wine; we had an elderflower tree in our garden and the scent was glorious; unfortunately now, living in inner Birmingham, elderflower trees are rather more difficult to find, and despite much searching while out dog walking I haven’t come across any. Do you ever get a niggling idea in your head that just won’t go away? The seedling of a fully formed plan that intrudes on your thoughts and gets stuck in your mind, germinating, until it is eventually transformed into a brilliant, fully-fledged idea…. It started with mousse. All I knew at that point is that I wanted to make some mousse of some sort. I sat on that idea for a couple of weeks, in the meantime planning Valentines day baking, which got me thinking about red velvet…which got me thinking about cream cheese, because what is a red velvet cake without the iconic cream cheese icing?! (It’s the best bit!) My mind put the cream cheese and the mousse together… then spread it on top of some red velvet brownies… and added ganache, and then threw in some oreos for good measure… And red velvet brownies with oreo cream cheese mousse and chocolate ganache were born! Salted caramel chocolate fudge cake – four layers of moist chocolate fudge cake filled with salted caramel swiss meringue buttercream, topped with whipped chocolate ganache and a liberal dose of salted caramel.
This salted caramel chocolate fudge cake turned out beautifully but boy did it give me some hassle! Firstly, the cakes were meant to take 35 minutes to bake but ended up taking nearly an hour…then I had MAJOR swiss meringue buttercream issues – it curdled, which is normal, but even after over half an hour of whisking (which makes my lack of stand mixer all the more annoying) it was still curdled…I saved it in the end by microwaving a small bowl of the mixture for 10 seconds then pouring it back in to the rest of the mix while whisking, a couple more minutes of whisking later it came together into silky smooth buttercream, phew! I was told when going to visit a friend that I “must bring cake”, so of course I jumped at the opportunity to do some baking! He LOVES chocolate so I made one of the most chocolaty things I could think of – quadruple chocolate cupcakes… Soft, dark chocolate cake surrounds a centre of gooey dark chocolate ganache and the cupcake is topped with swirled milk and white chocolate swiss meringue buttercream. They are insanely good! Seriously, among the best cupcakes I have ever eaten. Ever. (more…)
Sometimes I get the urge to bake something utterly over the top, this time, I wanted to make something GREEN…The cake stash was getting low so I knew that it had to be some form of cake…What’s green…? Mint. What goes with mint…? CHOCOLATE! So….mint choc chip chocolate zebra cake was born. The cake itself is an impressive looking hidden design of alternating layers of chocolate and peppermint sponge, covered in mint choc chip buttercream and topped with chocolate ganache and peppermint chocolate bark.
