Little cherry almond cakes - easy to make and perfect for picnics!

One of my fondest memories from my childhood is the family picnics we used to have throughout the Summer. My parents would pack us three children, two dogs and a veritable feast into the car and we would head off to a spot by the river where we could play in the water and the accompanying fields before stuffing our faces. I don’t go on very many picnics anymore now that I am an adult, which is something that I need to fix as they are one of the most enjoyable parts of Summer. (more…)

I haven’t had as much fun in the kitchen in a long time as I had making these mini bleeding heart Halloween cakes; yes I am still trying to clean the food colouring off my hands and worktops but it was a fun and almost therapeutic craft project. The hearts are the brainchild of Lily Vanilli, an incredibly talented baker and author who originally designed the hearts as an anti-valentines cake. I thought they would be great for Halloween and would look even more impressive placed on top of mini red velvet layer cakes with a cascade of ganache ‘blood’ down the side. (more…)

I made these little lemon, olive oil & semolina cakes for a picnic last week; they are great for picnics as they are very quick to whip up, and because they aren’t iced they can be transported in their tins or a tub easily if need be. The combination of lemon zest and semolina flour give the cakes a lovely sunny yellow colour, and the drenching of syrup provides a strong kick of lemon flavour and keeps them deliciously moist and soft. It can be difficult baking cakes when there are just two of you to eat it…you either end up eating way more cake than is healthy, or it ends up in the freezer. I try to bake larger cakes and batches of cupcakes only when there is a party to take them to, or when we have people visiting. But sometimes there is no occasion to bake for and you just really want cake…. And that’s where these mini cakes are perfect. The recipe makes exactly two portions of cake, and you don’t even need to buy any special cake tins as they are baked in regular (clean, empty) food tins, the kind that tinned tomatoes, baked beans, soup etc come in. (I used 400g ones – the most common tin size)
