Spiced honey roasted nuts – sweet, spicy, salty and utterly addictive! They are great to snack on and would make a lovely home-made Christmas gift.
It is so very nearly Christmas and if you are in need of an easy yet lovely home-made gift then these spiced honey roasted nuts may just be it. Nutty bourbon brownies – gooey, fudgy brownies with a boozy kick and plenty of crunchy nuts.
It has been a long time since I shared a brownie recipe on here; I am making up for that though with these nutty bourbon brownies as they are very, very good! I actually made the recipe a while ago but hadn’t gotten round to sharing it here, looking at the pictures again is making me think that I will have to bake another batch! (more…)
I honestly thought that these brownies were going to be rubbish; this was my first time baking with coconut flour and I just made the recipe up as I went along. They didn’t look like anything much when I pulled them out of the oven and they don’t have that much coveted shiny, flaky brownie crust; but when I bit into one I was totally converted, they are extremely good. So rich, fudgy and chocolatey that they are practically indistinguishable from the best regular flour/refined sugar/butter laden brownies. And yet they are free from gluten, grains, refined sugar AND dairy and are made using several highly nutritious ingredients so you can enjoy a slice without feeling too guilty. (more…)
Like fruitcake, nut roast is another very divisive and much-maligned food; oft-mocked and shunned by vegetarians in favour of something a little less clichè, it is rare nowadays to find it on a menu anywhere. Which is a shame as it is both incredibly nutritious and, if done well, extremely delicious. I make nut roast fairly regularly, both I and my fiance love it, and it works perfectly with all of the usual roast dinner trimmings; any leftovers also make great sandwiches with some cheese and chutney. It is also perfect for Christmas dinner as a vegetarian option (though it does also go down well with the meat eaters) as it can be served with all the same sides as the main roast. A regular nut roast is a little plain-looking though, too boring for a proper festive dinner; this pie however makes for a very impressive centerpiece, making sure that any vegetarians don’t feel left out and under-catered for. I had never tried almond milk up until a couple of days ago when I saw that it was on offer and bought some on a whim. I didn’t think that I would really like it but was interested to try…and now I’m hooked! It’s surprisingly delicious, though not for everyone; Damian tried it and proclaimed it to be “really weird, and the taste didn’t fit the texture”, whatever that means…he’s odd. I don’t think I would ever want it in my tea, but I would now rather drink a glass of almond milk as opposed to regular milk, and almond milk hot chocolate is something of a revelation. (more…)
It feels like an absolute age since I last posted! I don’t think I have ever actually gone this long without posting since I first started the blog… I have to admit that I quite enjoyed being lazy and having a bit of a break from blogging and although I am eager to get back into it I am finding it a little difficult to get back into the swing of things! Lately I have been feeling like time has been rushing past me at an unbelievable rate, I’ve been struggling to find enough time to get everything done and I have to admit that I have let things like cleaning the house slide a little as I struggle to fit everything in… I’m not even particularly busy, there are just so many little tasks that all add up into an overwhelming mass and I have been tired and inefficient. I always make sure I find some time to fit in a bit of baking though! (more…)
I think I may have found a new favourite bread; this muesli bread is hearty, satisfying, delicious and it’s healthy! It is also a great way to use up some of that half eaten packet of muesli forgotten about at the back of the cupboard for 6+ months… (just me?). It stays soft for a good few days in a airtight container and makes fantastic toast; I’ve been enjoying it for breakfast slathered with butter and jam. The flavour is slightly sweet from the dried fruit and a little maple syrup and there’s a hint of warm cinnamon. Because it is full of oats, fruit and nuts it is very filling, so it makes a great breakfast or snack. (more…)
I have been away from the blog for a little while – visiting my parents and cat-sitting in London; and have struggled to find the time (and motivation – the weather has been so warm I have just wanted to be outside) to do any blogging, so apologies to those of you who have commented and I haven’t yet replied to, service shall resume as normal as of now! If you can believe it, I didn’t eat a single piece of chocolate this Easter…not one mini egg….shocking and disgraceful I know…I did however consume quite a lot of cake and chocolate strawberry tart to make up for that fact, so I’ve been feeling the need for something a little healthier, a little more green…maybe even some (gasp!) kale…Kale blitzed up with pine nuts, olive oil and parmesan cheese into pesto that is.
