I have come down with a stinking cold. I don’t get ill very often, maybe about once every five years; so when I do catch a cold it really hits me hard. I have been struggling to do much at all but I have work and diy to be getting on with and Ringo to walk so I’ve spent a lot less time resting than I would like to. It has meant that I really haven’t felt like cooking but I still need tasty, nourishing food, fast! Although I do really like making my own pizza from scratch, including the dough; it can be a bit of a faff and takes a while. Not good if you are hungry and craving pizza fast! I am not a fan of shop bought pizza bases, but one really good ready-made solution is naan bread; it makes the perfect pizza base and because it is pre-baked you simply need to melt your cheese to finish off your pizza. Spring is just about here, and with it comes an abundance of fresh produce, in particular, green things! This super green spaghetti with lemony rocket & walnut pesto, asparagus, peas and goat’s cheese makes great use of a few of spring’s best vegetables – asparagus, peas (ok, so I cheated on the pea front and used frozen ones, but it would be even better with fresh) and rocket.
