As much as I enjoy making towering, intricately decorated layer cakes, the cakes that I most enjoy eating, and crave most often, are generally a far simpler affair. The kind of cakes that aren’t too pretty to look at, but you feel much less guilty about eating a massive wodge of for a mid-morning snack. I had been craving apple cake for a couple of weeks and when the tree in the garden yielded a few ready-to-pick apples that weren’t great for eating fresh, but were good for cooking with, I finally got round to satisfying the craving with this simple wholemeal apple cake. Last week I spoke about Spring having finally arrived, the weather getting warmer and the sun making an appearance…. well my happiness was sadly very short-lived as soon after that post was published the weather took a turn for the worse and it has been cold, wet, windy and miserable since then. So much for craving light, summery salads and barbecue foods; I have gone back to cooking hearty soups, stews and comfort foods such as this slow cooked lamb Rogan Josh which I served with rice and some quick, flaky roti flatbreads. Chocolate coffee and cardamom biscuits (cookies) - Domestic GothessI’ve been feeling really old the last few days…I’ll be 29 later on this month, which yes, I know is not really very old at all. But I went out clubbing (to a rock club, of course) for the first time in over six months on Saturday, spent most of the night dancing and had a brilliant time; aaand it’s taken me four days to recover from it… I woke up the morning after and everything hurt! I like to think that I’m fairly fit, I walk at least six miles every day (dogs are brilliant for fitness), and do kettlebell/bodyweight workouts three times a week (how else do you think I get away with baking so much…?!); and yet a bit of dancing has completely done me in! Not to mention the bit where I didn’t get to bed till nearly 4am, that left me zombified for two days; I dread to think how awful I would have felt if I’d had a hangover as well… (more…)
