Did you know that the Queen has not one but two birthdays? Obviously there is her actual birthday, on April 21st; but since 1748 the sovereign of the UK has had an ‘official’ birthday which is generally set around the start of June, to coincide with a higher probability of good weather for outdoor ceremonies. For her 90th birthday this year, June 11th is the official date, but celebrations will begin on June 10th as well as there being events on May 12-15th. (more…)

A marvelous thing happened the other day – I was able to go outside without a coat! Since then there have been a few days where it has been warm enough to venture out without one (though certainly not every day!), the sun has been making a regular, much welcomed appearance, and last night it was still just about light at 8pm. All of this has left me in quite a cheery mood and very much ready for summer, and what better way to celebrate the changing of the seasons than with a suitably cheerful cake? This berry cider cake is exactly that; although it may be a little early for berries I just couldn’t resist buying some, more for their beautiful, bright colour than anything else! (more…)

Mixed summer berry charlotte russe - Domestic GothessI think that this months Daring Bakers challenge has got to be my favourite one yet; we were challenged to make either a Charlotte Royale or a Charlotte Russe. For those of you who don’t know what those are, a Charlotte Royale is a dome shaped dessert made up of slices of jam filled swiss roll on the outside, filled with Bavarian cream; it looks somewhat brain-like… which is why I chose to make the Charlotte Russe, which is a ring of sponge fingers filled with Bavarian cream or mousse. I made my own sponge fingers, though you can use shop bought if you prefer. I was originally going to make a pear and caramel one, but then decided that there is so much beautiful fresh fruit around at the moment that it would be a shame not to use it, so went for mixed summer berry instead. It was so good though that I will definitely be making another at some point so will make pear and caramel next time. (more…)

Strawberry, elderflower and almond layer cakeI think this may be one of the prettiest cakes i have ever made…it is certainly a good deal more attractive than my last post! It is the perfect cake for spring, delicately flavoured with fragrant elderflower and sweet strawberries. I love elderflower, I remember when I was little helping my parents pick elderflowers to make wine; we had an elderflower tree in our garden and the scent was glorious; unfortunately now, living in inner Birmingham, elderflower trees are rather more difficult to find, and despite much searching while out dog walking I haven’t come across any. Chocolate Strawberry Tart

chocolate strawberry tartWe were visiting some friends over the weekend and I was charged with bringing dessert (what a surprise!); despite the fact that I was already taking the remnants of two cakes with us (carrot and cookie dough brownie), I couldn’t resist making something else to take…(I’m good at overkill…).  I figured that two cakes was probably enough cake (just…!) so for my third dessert I went with a tart. Roasted Strawberry Ice Cream

Yes, I know it is completely the wrong time of year to be posting an ice cream recipe, especially a strawberry one, but this one is made with frozen strawberries so you don’t need to wait for strawberries to be in season to make it (you can still use fresh ones as well though). I was having a bit of a freezer clearout and had nearly two kilos of strawberries in there that had been there god knows how long and really needed to be used up. I was unsure as to what to do with them – I made a couple of smoothies but I wanted to try and use them up quickly and I would have had to live off smoothies to achieve that! I had already made several batches of jam so didn’t really want any more so I was left with ice cream, but I had made some ice cream with the same strawberries previously and had been disappointed with the flavour – they were just a bit watery and tasteless and the ice cream was icy because I had had to add so much strawberry puree to it to get any flavour (the reason they had been abandoned in the freezer in the first place).
