I have been eating so many berries recently, I’ve always got a stash of them both in the fridge and in the freezer, I can’t get enough! I want to make the most of them while they are still in season as soon enough they will be gone for the Winter. Although most of them just get eaten straight from the tub, I have managed to set a few aside for baking with; these coconut and berry fruit tarts are a wonderful way to serve them and would be perfect for afternoon tea or a garden party, or just because it’s Tuesday. It feels like an absolute age since I last posted! I don’t think I have ever actually gone this long without posting since I first started the blog… I have to admit that I quite enjoyed being lazy and having a bit of a break from blogging and although I am eager to get back into it I am finding it a little difficult to get back into the swing of things! I have been away from the blog for a little while – visiting my parents and cat-sitting in London; and have struggled to find the time (and motivation – the weather has been so warm I have just wanted to be outside) to do any blogging, so apologies to those of you who have commented and I haven’t yet replied to, service shall resume as normal as of now! I debated for a while as to whether I should actually publish this post or not…I just wasn’t entirely happy with the appearance of the tarts, I couldn’t help but feel that the pears turned out looking somewhat slug-like…In the end though taste won out. What they lack in looks they make up for in flavour. Sweet pears poached in a spiced red wine syrup are baked with rich chocolate frangipane in a crisp chocolate pastry crust. When topped with a dollop of ice cream and an extra drizzle of spiced red wine syrup they are heavenly. (more…)
So I had some Oreos left over from making red velvet brownies with oreo cream cheese mousse the other day. Granted, I could have just eaten them, but it seemed like more fun to come up with something to bake with them (although what I came up with doesn’t actually involve any baking). I’ve been meaning to make some tarts for a while now and although I had been planning on making pastry bases, I decided to swap those for oreo biscuit bases, topped with salted caramel and chocolate mousse. This recipe took a couple of go’s to get right, the first time I made them, the tarts were delicious but the frangipane sort of exploded and spread everywhere, they tasted good but looked a mess. I was determined to get them right and not be defeated by a tart; so I tried again with a few tweaks and they turned out beautifully! (more…)
