Cherry Almond Chia Pudding

Chia pudding with almond milk, honey and vanilla served with a tart cherry compote and toasted flaked almonds; a healthy, filling make-ahead breakfast.

I was given a big tub of chia seeds by my aunt a while back and so far haven’t come up with many ways to use them; some went into (very tasty) granola bars but I wasn’t sure what else to do with them, any suggestions would be most welcome! The most common chia based recipe seems to be chia pudding so I thought I’d give it a go; I honestly thought that I was going to hate it, it just seems like such a strange concept and it looks like a bazillion little eyeballs, but actually I really quite enjoyed it! That doesn’t mean that it isn’t odd, this stuff is weird with a capital W and it certainly won’t be to everyone’s tastes…Damian thought that it was disgusting and I have to agree that the texture is somewhat reminiscent of frogspawn (I don’t think that I’m doing a very good job of selling it…); but if you can get past that then it is really quite tasty and incredibly healthy! Happy New Year! This is my first post of 2016 so it kind of had to be a healthy one really. After the vast quantities of desserts, cheese and alcohol I consumed over the Christmas period I feel I should probably cut back a bit and try and be healthy for a little while at least… That is proving to be rather difficult while there are still piles of Christmas chocolates scattered around the house; it is probably a good idea to eat them all to get rid of the temptation… (more…)

Vanilla amond milk porridge with honey roast pear, cinnamon and hazelnuts. Dairy free and easily adaptable to be vegan. I had never tried almond milk up until a couple of days ago when I saw that it was on offer and bought some on a whim. I didn’t think that I would really like it but was interested to try…and now I’m hooked! It’s surprisingly delicious, though not for everyone; Damian tried it and proclaimed it to be “really weird, and the taste didn’t fit the texture”, whatever that means…he’s odd. I don’t think I would ever want it in my tea, but I would now rather drink a glass of almond milk as opposed to regular milk, and almond milk hot chocolate is something of a revelation. (more…)

Creamy coconut milk and cardamom rice pudding with blackberry compote, vegan and lactose free - Domestic Gothess I’ve been on a bit of a compulsive blackberry picking drive recently; I can’t seem to take the dog for a walk without coming home with a bagful of blackberries, it just seems a shame to walk past the heavily laden brambles without at least nabbing a few… I have made jam (recipe coming soon!) and I’ve been eating an awful lot of blackberry compote, which is delicious with yoghurt or porridge, but I think I enjoyed it most when I paired it with this creamy, comforting coconut and cardamom rice pudding. Vegetarian red lentil koftas with flatbreads & harissa youghurt sauce - Domestic GothessNow that the weather has warmed up a little and the evenings are lighter I have been craving summery food and meals outside, problem being that my garden is an absolute state…completely overgrown and chock full of weeds. Even my poor dog struggles to get to the bottom of the garden; it is going to take some serious, backbreaking work to get it into any kind of fit state for enjoying a meal in (and I don’t even have any outdoor furniture…). If I did have a nice garden to eat in though, these vegetarian red lentil koftas with flatbreads and harissa yoghurt are exactly the kind of thing I would make.
