Fresh ginger and honey ice cream - Domestic GothessI don’t know what the weather is like where you are, but in the UK it has been HOT (relatively…I know that some of you will sneer at our paltry 30 degrees, but we don’t do heat well in the UK, and being a goth I melt when exposed to bright sunlight…); I made the mistake of attempting to do a kettlebell workout yesterday…and I have never sweat so much in all my life…the floor around me was actually wet (pleasant I know). Mixed summer berry charlotte russe - Domestic GothessI think that this months Daring Bakers challenge has got to be my favourite one yet; we were challenged to make either a Charlotte Royale or a Charlotte Russe. For those of you who don’t know what those are, a Charlotte Royale is a dome shaped dessert made up of slices of jam filled swiss roll on the outside, filled with Bavarian cream; it looks somewhat brain-like… which is why I chose to make the Charlotte Russe, which is a ring of sponge fingers filled with Bavarian cream or mousse. I made my own sponge fingers, though you can use shop bought if you prefer. I was originally going to make a pear and caramel one, but then decided that there is so much beautiful fresh fruit around at the moment that it would be a shame not to use it, so went for mixed summer berry instead. It was so good though that I will definitely be making another at some point so will make pear and caramel next time. (more…)

Vegetarian red lentil koftas with flatbreads & harissa youghurt sauce - Domestic GothessNow that the weather has warmed up a little and the evenings are lighter I have been craving summery food and meals outside, problem being that my garden is an absolute state…completely overgrown and chock full of weeds. Even my poor dog struggles to get to the bottom of the garden; it is going to take some serious, backbreaking work to get it into any kind of fit state for enjoying a meal in (and I don’t even have any outdoor furniture…). If I did have a nice garden to eat in though, these vegetarian red lentil koftas with flatbreads and harissa yoghurt are exactly the kind of thing I would make. They are the perfect summer sharing food, just lay everything out on the table and let people pile up their own flatbreads. (more…)

Pain au crème - double cream bread rolls - Domestic Gothess I had a bit of leftover cream sitting in the fridge about to pass it’s use by date and couldn’t for the life of me think what to do with it; I had been planning on baking some pain au lait and then I had a thought – why not use cream in place of the milk? I wasn’t entirely sure how well it would work, whether the cream would make the bread too heavy, but I gave it a go regardless and was incredibly pleased by the result. (more…)

Chocolate Coffee Cardamom Biscuits

Chocolate coffee and cardamom biscuits (cookies) - Domestic GothessI’ve been feeling really old the last few days…I’ll be 29 later on this month, which yes, I know is not really very old at all. But I went out clubbing (to a rock club, of course) for the first time in over six months on Saturday, spent most of the night dancing and had a brilliant time; aaand it’s taken me four days to recover from it… I woke up the morning after and everything hurt! I like to think that I’m fairly fit, I walk at least six miles every day (dogs are brilliant for fitness), and do kettlebell/bodyweight workouts three times a week (how else do you think I get away with baking so much…?!); and yet a bit of dancing has completely done me in! Not to mention the bit where I didn’t get to bed till nearly 4am, that left me zombified for two days; I dread to think how awful I would have felt if I’d had a hangover as well… (more…)

Jam lamingtons - squares of vanilla sponge cake filled with cherry jam, coated in chocolate and coconut - Domestic GothessThis was the first time I had ever tried a lamington, I had heard of them of course, but never thought to try making them. Which is one reason why I enjoy being part of the Daring Bakers – it encourages me to try things that I wouldn’t think to (or have heard of) on my own, most of which I end up loving. For those of you who haven’t heard of lamingtons, they are a very popular Australian treat consisting of squares of vanilla sponge cake dipped in chocolate icing and rolled in desiccated coconut, sometimes with a jam filling. Passion Fruit, White Chocolate & Coconut Layer Cake

Passion fruit, white chocolate and coconut layer cake It seems I have a bit of a thing for three layer cakes; if you use 15cm/6in pans they turn out perfectly proportioned, tall enough to look impressive, but not so huge that they are impossible to eat. In fact I use my 15cm tins far more often than any others I own (and I own quite a few…), as they are such a convenient size if you don’t have loads of people to feed; I also want to get some really diddy 10cm ones to make tiny towering cakes with!
