More bloomin’ pancakes! I promise that once pancake day is over I will share something that isn’t pancakes, but for now I can’t get enough of them! These ones are baklava inspired – the sweet, syrupy, nutty filo pastry treat in pancake form. These are thick, soft, fluffy American-style pancakes made with Greek yogurt to keep them extra moist and pack in some protein and they are flavoured with cardamom, cinnamon and chopped nuts with a delicious sweet syrup with hints of lemon, orange blossom water and rose. It’s nearly the second best day of the year (after Christmas) – pancake day! I love pancakes in all forms and make them regularly, for breakfast, dessert, dinner (savory or sweet ones!) or a snack; they are infinitely adaptable, easy to make and one of my favourite foods. I realised that I hadn’t really posted any dessert pancakes on the blog, just breakfasty ones; so I am remedying that with these indulgent pancakes with caramel oranges and almond ice cream. (more…)

Loaded Veggie Quesadillas

Loaded veggie quesadillas - delicious, filling, healthy quesadillas stuffed with spiced roasted sweet potato, peppers, black beans, avocado, cream cheese and cheddar.

Quesadillas have to be one of the meals that I make most often, as regularly as once a week because they are not only soooo tasty (anything with cheese is good in my book), but they are also pretty quick and simple to make and are infinitely adaptable. These particular ones are loaded with veggies and black beans so actually make for a pretty healthy and filling meal. (more…)

Valentine’s Day is tomorrow and I’ve got a last-minute post for you in the form of Persian love cake. The story behind this cake goes that there was a Persian woman who was madly in love with a prince so she baked him a cake to make him fall in love with her; because what better way is there to win someone over than with cake?! There are multiple versions of the story floating around, some ending happily, some definitely not. It is extremely unlikely to actually be true and is most likely a fairly modern invention; but I do like food with a story!

Even though my fiance and I don’t bother celebrating Valentine’s Day, I will still take the opportunity to do some themed baking and use my neglected set of heart shaped biscuit cutters. Not that these Linzer biscuits should be solely reserved for Valentine’s Day of course, they are far too delicious for that! Obviously you don’t have to use a heart shaped cutter, as long as you have one larger cutter and a small one for the cut-out (it doesn’t even need to be the same shape) then you are sorted so they are suitable for any time of year. Healthier Chocolate Banana Waffles

Yesterday I took a trip to London to attend the first ever Best Of PinterestUK awards as several (five!) of my recipes had been shortlisted; I didn’t win in the end but my spiralized vegetable noodle bowls did come runner up in the best healthy recipe category (beaten by a recipe by Fearne Cotton) for which I won a whole kilo of chocolate. Even better than the chocolate though was actually getting to meet a load of my fellow food bloggers, most of whom I had thus far only known online and who were all even lovelier in real life. I was craving cake so badly at the weekend that I just had to give in and bake one, there was no point resisting! Besides, I spent a good portion of my weekend re-organising the kitchen (no small task!) so I think that cake was well deserved. To make a bit of space in the cupboard I decided to use up one of my jars of clementine marmalade and make a marmalade and ginger cake. This is a beautifully soft and moist cake with a lovely orange flavour and a hint of warm ginger.

Healthy superfood pancakes - an indulgent breakfast that is packed full of nutritious ingredients, eating healthily doesn't need to be boring!

I have porridge for breakfast most weekdays (I am half Scottish after all, though I don’t go as far as making it the way my dad insists is traditional, with just oats, water and salt). But at the weekends I like to have a bit more of an indulgent breakfast. I love pancakes and waffles with all the toppings, but they don’t lend themselves particularly well to a healthy eating plan. I am a big believer in balance, so I think that an indulgent breakfast every now and again is perfectly alright, as well as regular slices of cake; but I wanted to come up with something that fit both bills – decadent but good for you.
