Chocolate chip peanut butter energy bites - these healthy protein packed energy balls taste like chocolate chip peanut butter cookie dough! They take just ten minutes to make and are perfect for snacking on when you need a boost.
I've made various different types of energy bites over the years, including my cranberry, pistachio and coconut energy bites and these superfood ones; but these chocolate chip peanut butter energy bites are by far my favourite incarnation.
This is for the simple reason that they taste like chocolate chip peanut butter cookie dough; but are actually full of healthy ingredients like almonds, flax and chia seeds, oats, dates and peanut butter.
They make an awesome filling snack and give you a good burst of energy, I particularly like to munch on a couple shortly before doing a workout to help fuel me through it.
As well as tasting delicious, they also take all of 10 minutes to make, are naturally vegan and will keep in the fridge for at least a week so you can always have a batch to hand for emergency snacking.
How To Make Chocolate Chip Peanut Butter Energy Bites:

*For the best results make sure that you follow the recipe closely. As always, I highly recommend using the gram measurements (with a digital scale), rather than the cup conversions. Cup measurements are simply not accurate enough for baking and I cannot guarantee the best results if you use them.*
Start by placing pitted medjool dates, almonds, rolled oats, chia seeds and ground flax seeds in a food processor and blending until everything is really finely chopped. This can take a few minutes so be patient.
Next, add smooth peanut butter, vanilla extract, maple syrup and chocolate chips and blend again until everything is well combined. You don't want the chocolate chips to get too finely chopped up so don't blend the mixture for too long.
Tip everything into a bowl and use your hands to roll it into small balls. If you find that the mixture is difficult to stick together then stir in a drop of water, a little at a time, until it clumps together easily.
If you like you can roll the energy bites in cacao powder then place them in an airtight container in the fridge.
Variations:
Energy bites lend themselves really well to varying the ingredients depending on what you've got in the cupboard. Instead of peanut butter you can use almond or cashew butter, the chia and flaxseeds can be swapped for any other kind of seed, and the almonds can be switched out for whatever kind of nut you prefer.
Varying the ingredients can change the texture a little so if you find the mixture too sticky then simply add some extra rolled oats, and if it is too dry to form into balls, add some more nut butter or a drop of water.

- 50 g dark chocolate chips
- a drop of water if needed
