I’ve been on a bit of a compulsive blackberry picking drive recently; I can’t seem to take the dog for a walk without coming home with a bagful of blackberries, it just seems a shame to walk past the heavily laden brambles without at least nabbing a few… I have made jam (recipe coming soon!) and I’ve been eating an awful lot of blackberry compote, which is delicious with yoghurt or porridge, but I think I enjoyed it most when I paired it with this creamy, comforting coconut and cardamom rice pudding….
For the June daring bakers challenge Rebecca from BakeNQuilt.com challenged us to make Charlotte Royale and Charlotte Russe from scratch. Savory or sweet Charlottes were definitely tasty showstopper
I think that this months Daring Bakers challenge has got to be my favourite one yet; we were challenged to make either a Charlotte Royale or a Charlotte Russe. For those of you who don’t know what those are, a Charlotte Royale is a dome shaped dessert made up of slices of jam filled swiss roll on the outside, filled with Bavarian cream; it looks somewhat brain-like… which is why I chose to make the Charlotte Russe, which is a ring of sponge fingers filled with Bavarian cream or mousse. I made my own sponge fingers, though you can use shop bought if you prefer. I was originally going to make a pear and caramel one, but then decided that there is so much beautiful fresh fruit around at the moment that it would be a shame not to use it, so went for mixed summer berry instead. It was so good though that I will definitely be making another at some point so will make pear and caramel next time….
Blackberry recipe number two! I had been planning on making a batch of plum crumble ice cream whilst they were in season, but seeing as I ended up picking so many blackberries I decided to do a blackberry crumble one instead. The ice cream is an attractive pale violet colour and has a delicate blackberry flavour which melds beautifully with the chunks of crunchy crumble. If you wanted to really amp up the purple colour you could always add a couple of drops of food colouring….
I was out walking Ringo whilst visiting my parents in West Sussex last week, lamenting that I hadn’t had the foresight to bring along a container so that I could pick blackberries when I realised that an unused dog-poo bag would do nicely. I managed to pick over a kilo of berries there were so many; but then I had to decide what to do with them all! I chose to make three things to use them all up, this cake was the first….
