Chocolate Chip Almond Waffles

Servings 6 waffles
Author Domestic Gothess

Ingredients

Waffles:

  • 60 g (¼ cup) butter melted
  • 25 g (2 tbsp) caster sugar
  • 2 large eggs
  • 100 g (¾ cup + 1 Tbsp) plain flour
  • 85 g (¾ cup) ground almonds
  • 1 teaspoon baking powder
  • pinch salt
  • 190 ml (¾ cup + 1 Tbsp) milk
  • 1 teaspoon vanilla extract
  • couple drops almond extract
  • 100 g (3.5oz) milk chocolate chips

To Serve:

  • sliced strawberries and blueberries (or whatever fruit you want, I'm not your mother)
  • flaked almonds (toasted if you like)
  • maple syrup (obvs)
  • cream, yoghurt or ice cream

Instructions

  • Preheat the oven 140C/275F/gas mark 1 and place a baking sheet in there. Place all of the waffle ingredients apart from the chocolate chips into a blender and blend until smooth. Alternatively you can whisk together the melted butter, eggs, milk and extracts in a jug; sift together the flour, sugar, ground almonds, baking powder and salt in a bowl then whisk the wet ingredients into the dry.
  • Stir in the chocolate chips then set the batter aside for five minutes while you heat the waffle iron.
  • Brush the waffle iron generously with oil then use a ladle to portion in the waffle batter. Make sure that you stir it regularly and scoop from the bottom so that you get some chocolate chips in each one.
  • Cook the waffles according to the manufacturers instructions (all waffle irons vary), or until golden. Carefully transfer the cooked waffles to the baking tray in the oven to keep warm. Re-grease the waffle iron and repeat with the rest of the batter.
  • Serve the waffles topped with fresh fruit, a sprinkling of flaked almonds, maple syrup and a dollop of cream, yoghurt or ice cream if you like.
