They are a savoury, high-protein, healthy alternative to ground meat, made with basic ingredients and are packed with umami flavor and a wonderful chewy, crispy texture.

    Ingredient Details:

Tofu: Make sure to use an extra firm tofu to ensure crispy crumbles. I use Tofoo brand as it does not need to be pressed; if you use a different brand you may need to press it first to drain out the excess liquid.

Soy sauce: Dark soy sauce adds flavour and colour. Feel free to use a low sodium variety if you prefer or tamari for gluten-free.

Olive oil: To help achieve the crisp texture. You can swap this for pretty much any other kind of oil.

Spices: I use smoked paprika for a smokey flavour, plus ground ginger, cumin, allspice, dried thyme and some all purpose seasoning blend. You can absolutely vary these depending on what you want to serve the tofu crumbles with. Things like onion and garlic granules, ground coriander and nutritional yeast would be great additions.

How To Make Baked Tofu Crumbles:

(Full measurements and instructions can be found in the recipe card at the bottom of the page)

Step 1, the seasoning ingredients in a bowl.
    1. Step 1: Mix together the soy sauce, olive oil and spices in a bowl.
    Step 2, the crumbled tofu.
    1. Step 2: Crumble in the tofu using your hands.
Step 3, the tofu in the roasting tin before baking.
    1. Step 3: Mix well to coat the tofu in the seasoning, then spread it out in a thin layer in a lined roasting tin.
Step 4, the tofu in the roasting tin after baking.
    1. Step 4: Bake for 30 minutes, stirring every now and again.

    Top Tips:

Use the firmest tofu you can find for the best texture. If it has a lot of excess liquid in it then you will need to press it first to squeeze that out. And definitely don't use silken tofu! It will not work here.

The cooking time for the tofu may vary depending on your oven, the size of your crumble pieces, and how much moisture your tofu contains. For me, it usually takes about 30 minutes but it could take less or more for you.

Use a large enough sheet pan or roasting tin that the tofu can be spread out in a single layer; if it is too crowded it will take longer to get crisp.

    FAQ's:

How should I store baked tofu crumbles?

The tofu crumbles are best eaten fresh while they are crisp, but they will keep in an airtight container in the fridge for about 3-4 days and can be eaten cold or heated up.

Can I make it in an air fryer?

Yes though you will need to either remove the grate or line the basket with baking paper so that the tofu doesn't fall through the holes.

Cook at 180°C/350°F for approximately 10-15 minutes, stirring occasionally.

    Ingredients

    • 450 g (1 lb) extra firm tofu (I use Tofoo brand)
    • 2 Tablespoons olive oil
    • 2 Tablespoons soy sauce
    • 1 ½ teaspoons smoked paprika
    • ¾ teaspoon cumin
    • ¾ teaspoon ground ginger
    • ¾ teaspoon all-purpose seasoning
    • ½ teaspoon dried thyme
    • ¼ teaspoon ground allspice

    Instructions

    • Preheat the oven to 200℃/180℃ fan/400℉/gas mark 6. Line a large roasting tin or sheet pan with baking paper.
    • Drain the tofu and pat it dry with kitchen paper.
450 g (1 lb) extra firm tofu (I use Tofoo brand)
    • Mix together the olive oil, soy sauce, smoked paprika, cumin, ginger, all-purpose seasoning, thyme and allspice in a large bowl.
2 Tablespoons olive oil, 2 Tablespoons soy sauce, 1 ½ teaspoons smoked paprika, ¾ teaspoon cumin, ¾ teaspoon ground ginger, ¾ teaspoon all-purpose seasoning, ½ teaspoon dried thyme, ¼ teaspoon ground allspice
    • Use your hands to crumble in the tofu, making some larger and some smaller crumbs.
    • Mix together well so that the tofu is evenly coated in the seasoning, I find it easier to use my hands.
    • Spread the tofu out in a single layer in the roasting tin.
    • Bake for about 30 minutes until browned and crisp. Stir it a couple of times during baking so that it browns evenly on all sides. The smaller crumbs will be darker than the larger ones, this is normal. Serve hot or cold.
