Superfood chocolate bark - a healthy sweet treat- dark chocolate with almonds, goji berries, seeds, bee pollen & matcha & blueberry flavored white chocolate.
Apart from my mincemeat bundt cake and a few biscuits and things left over from Christmas I have been doing fairly well so far this year at eating healthily (and yes I know it hasn't been very long yet, shush you!); I've been making lots of soups and stews, stocked up on veg and have put all the packets of lentils at the back of the cupboard to good use.
There is no denying that I have a sweet tooth though and I crave a little something sweet after most meals; usually a couple of squares of dark chocolate is enough to satisfy the craving however and has the bonus of actually being good for me.
I made this superfood chocolate bark just to make my chocolate nibble a bit more interesting and add in some extra healthy ingredients.
I like the contrast in textures between the chocolate and the crunchy and chewy toppings and it is beautifully colourful!
I used 70% dark chocolate for the base and topped it with whole raw almonds, goji berries, pumpkin and chia seeds, bee pollen and white chocolate mixed with matcha powder and freeze dried blueberry powder.
I haven't given exact amounts for all of the toppings because it really is just a case of scattering them over the melted chocolate so you can use as much or as little as you like.
You can also vary the toppings depending on what you have - different nuts and seeds, dried cranberries or cherries, freeze dried fruit pieces and cacao nibs would all work well.

My particular favourites are the freeze dried fruit powders which are very versatile; they can be used to flavour chocolate as above, sprinkled over porridge for a burst of fruity flavour or added to buttercream or macarons to add flavour without ruining the consistency by adding extra liquid.

Superfood Chocolate Bark Recipe:
Superfood Chocolate Bark
Ingredients
- 200 g (7oz) dark chocolate chopped
- 100 g (3.5oz) white chocolate chopped
- 1 tsp matcha powder
- 1 ½ tsp freeze dried blueberry powder
- handful dried goji berries
- handful whole raw almonds
- handful pumpkin seeds
- 1 tsp bee pollen
- 1 tsp chia seeds
Instructions
- Line a baking sheet with baking parchment. Melt the dark chocolate, either in a bowl over a pan of gently simmering water, or in short bursts in the microwave; don't let the chocolate get too hot.
- Melt the white chocolate in the same way then pour half of it into a separate bowl. Stir the matcha powder into one half and the blueberry powder into the other. If the chocolate becomes too thick, give it a couple of seconds in the microwave to re-melt it.
- Pour the dark chocolate onto the prepared baking sheet and use the back of a spoon to spread it out into a rough rectangle. Drizzle both white chocolates over the top, reserving a little bit of each.
- Scatter over the goji berries, almonds, pumpkin seeds, bee pollen and chia seeds then drizzle over the remaining white chocolate. Set aside for a couple of hours at room temperature, or 20 minutes in the fridge until the chocolate has set then use a sharp knife to chop the slab into rough pieces. Store in an airtight container.

I try to ensure that I get sufficient rest. Have tried to become more aware of my needs etc. As if get sufficient rest and not overburdened then likely to be more effective in tasks which I pursue.
Have tried, and continue to try to make fiancé aware also. He sometimes talks when I am in the midst of tasks etc. I have explained that it is best that he try to be patient and wait till I am free from tasks to make his request. He now himself will go for an afternoon nap if he has had a busy day. So means both of us get to have a peaceful, quiet restful time, and get to benefit from that. Thus increasing quality of life, and completed tasks etc. As not pushing ourselves to point of exhaustion etc.
